Step 2: Bloom Spices. Add the minced garlic to the pot and cook, stirring constantly, for another 30 seconds to 1 minute until fragrant. Be careful not to burn the garlic. Sprinkle in all the dry spices (garlic powder, onion powder, cumin, chili powder, chipotle chili powder, dried oregano, smoked paprika if using, and salt) and stir well to coat the onions and garlic. Continue to cook for just 30 seconds more to toast the spices and enhance their flavors.

Pour in the chicken or turkey stock, fire-roasted tomatoes (undrained), green chiles (undrained), cooked and chopped turkey, frozen cauliflower rice, and the whisked full-fat coconut milk. Stir all the ingredients together until thoroughly combined and smooth. Bring the mixture to a gentle simmer over medium heat.
