  4. Once the oil is hot and shimmering, carefully place the seasoned chicken breasts in the skillet in a single layer, ensuring not to overcrowd the pan. Sear the chicken breasts for 3 to 4 minutes per side, or until they develop a beautiful light golden-brown crust.
  5. When the chicken breasts are lightly golden on both sides, carefully transfer the seared chicken breasts to a plate and set aside. It is important that the chicken is not fully cooked through at this point, as it will finish cooking in the oven. Do not drain the skillet; the flavorful drippings (fond) are essential for the sauce.

  6. Once the cheese has melted, return the skillet to the burner over medium-low heat. Continue stirring for 1 to 2 minutes or until the skillet returns to a gentle simmer and the sauce is heated through.
