Ingredients

  • 1 bunch organic curly kale
  • Juice of 1 whole lemon
  • 3 tablespoons good quality olive oil
  • 2 teaspoons raw local honey
  • 1 teaspoon salt, to taste
  • ⅓ cup dried cranberries
  • Pine nuts or chopped walnuts, optional, to taste

Instructions

  1. Rip the leaves of the kale from the stems and tear them into bite-sized pieces. Place the kale in a large bowl.
  2. Prepare your dressing: In a small bowl, whisk together the juice of one lemon, 3 tablespoons of good olive oil, 2 teaspoons of raw local honey, and salt, to taste, until well combined. Pour about half of the dressing over your kale. Using your hands, massage the dressing into the kale leaves until they begin to soften and wilt slightly (they will look a little less curly but will be much more tender and easier to digest). Add a bit more dressing at a time, to taste, ensuring all the kale is coated. Finally, toss in the dried cranberries and any optional nuts (pine nuts or chopped walnuts).
