  • 1 large egg



  • ½ tablespoon lemon juice



  • 2 teaspoons mustard powder



  • 2 cloves garlic peeled and smashed



  • 1 cup fractionated coconut oil a.k.a. liquid coconut oil



  • 1 teaspoon kosher salt plus more to taste

  • Add all ingredients to a suitable blending jar and allow them to settle for about 30 seconds.
  • Place the head of your immersion blender into the jar, pushing it down until it reaches the bottom. Turn the blender to high speed and keep the blender head stationary until you observe a thick, white mayonnaise forming at the bottom of the jar. This typically takes approximately 5 to 10 seconds.
  • Once the mayonnaise begins to form, slowly tilt and lift the immersion blender upwards through the mixture to emulsify the remaining oil. If necessary, you can briefly turn off the blender, gently push any un-emulsified oil from the top down towards the blades, then resume blending. Continue this process of tilting, lifting, and gently pushing until all the oil is fully incorporated and emulsified into a smooth mayonnaise.
  • Once fully emulsified, remove the blender and taste the mayonnaise. Adjust seasoning with additional kosher salt as needed. Serve immediately, or transfer to an airtight container and refrigerate until ready to use.
  • The size of the jar is important: the circumference of the jar must be only slightly larger than the head of the blender and the mixture must reach the blades.
  • Storage: Refrigerate any leftover mayonnaise in an airtight container for up to 2 weeks. If any separation occurs, simply reblend the mixture as needed to restore its creamy texture.
