Why This Instant Pot Lentil Soup is a Must-Try
Our Instant Pot Lentil Soup isn’t just another recipe; it’s a culinary revelation designed to bring maximum flavor with minimal effort. Here’s what makes it truly special:
- Unforgettable Flavor Profile: This soup is far from “average.” It boasts a harmonious blend of warm spices and bright lemon zest that transforms humble lentils into an extraordinary culinary delight. The thick, creamy texture and robust flavors make it incredibly satisfying without being overly heavy, perfectly balancing the earthy goodness of the lentils.
- Nutritious & Wholesome: Lentils are a powerhouse of nutrition, offering an excellent plant-based source of protein and fiber. This makes our soup an ideal choice for a healthy, hearty meal, whether you’re observing Meatless Mondays, adhering to a vegetarian or vegan lifestyle (simply omit the parmesan and use vegetable stock), or just looking for a wholesome dinner option. It’s truly a guilt-free pleasure.
- Effortless & Quick: The magic of the Instant Pot means this incredibly flavorful soup comes together with remarkable speed. Pressure cooking dramatically cuts down on cook time, allowing you to enjoy a deeply developed flavor typically associated with slow-cooked dishes in a fraction of the time. It’s perfect for busy weeknights when you crave something homemade and nourishing.
- Perfect for Meal Prep & Freezing: This recipe is incredibly freezer-friendly, making it an excellent candidate for batch cooking. Prepare a large batch and store portions for quick, healthy meals throughout the week or month. Simply thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave. Leftovers also keep beautifully in an airtight container in the fridge for up to one week, ensuring delicious meals are always within reach.
Key Ingredients for a Superior Lentil Soup
Each ingredient in this Instant Pot Lentil Soup plays a crucial role in building its deep, complex flavor and satisfying texture:
Red Lentils: We specifically recommend red lentils for this recipe. They cook faster and break down more easily than green or brown lentils, contributing to the soup’s wonderfully thick and creamy consistency. Their mild, slightly sweet flavor is also a perfect base for our spice blend. Unlike many legume recipes, there’s absolutely no need to pre-soak them! Just toss them into the Instant Pot dry, and they’ll emerge perfectly cooked with an ideal texture, much like our Instant Pot Pinto Beans (No Soak!).
Aromatic Vegetables (Onion, Carrots, Celery): This classic mirepoix forms the essential flavor base of our soup.
Onions provide a subtle sweetness and depth, while contributing a pleasing texture when chopped correctly. If you’re looking to master your knife skills, be sure to read my post on how to dice an onion efficiently.
Carrots add natural sweetness and a vibrant color, alongside a dose of vitamins.
Celery provides a mild, earthy counterpoint that rounds out the vegetable base beautifully.
Together with garlic, these aromatics lay the groundwork for the soup’s rich taste.
Spices (Cumin, Coriander, Paprika, Bay Leaves): This carefully selected blend of spices is what truly sets our lentil soup apart.
Cumin offers an earthy, warm aroma that is characteristic of many lentil dishes.
Coriander introduces a subtle citrusy and nutty note.
Paprika adds a gentle smokiness and a beautiful reddish hue.
Bay leaves infuse the broth with a delicate, herbaceous background flavor that deepens over time. These spices are toasted briefly to unleash their full aromatic potential before the liquids are added.
Crushed Tomatoes: A can of crushed tomatoes provides essential acidity and a rich, tangy depth that perfectly complements the earthiness of the lentils and the warmth of the spices. They also contribute to the soup’s thick texture and vibrant color.
Fresh Lemon Zest & Juice: This simple yet incredibly effective addition is the secret ingredient that brightens the entire soup.
Lemon zest infuses a fragrant, bright citrus aroma without adding excessive acidity. For tips on getting the most zest from your lemons, check out my comprehensive guide all about lemon zest!
Fresh lemon juice, added at the end, provides a final burst of tartness that cuts through the richness and awakens all the flavors.
Fresh Spinach: Stirred in at the very end, fresh spinach wilts beautifully into the hot soup, adding a boost of nutrients, a hint of freshness, and a lovely green color. It’s a great way to incorporate more greens into your diet without overpowering the dish.
Expert Tips for Perfect Instant Pot Lentil Soup
Achieving the perfect bowl of Instant Pot Lentil Soup is easy with these insider tips:
- Salt Smart: It’s crucial to add salt to the Instant Pot only after the lentil soup has finished cooking and the pressure has been released. Adding salt too early can prevent the lentils from softening properly, resulting in a tough texture. Seasoning at the end allows you to adjust to taste and ensures perfectly tender lentils every time.
- Effortless Spinach Slicing: This recipe calls for roughly sliced spinach, which is simpler than it sounds. To achieve this, just lay the spinach leaves flat on a cutting board and use a rocking motion with your knife, cutting back and forth in one direction. Don’t strive for perfection; a rough chop is all you need for the spinach to incorporate beautifully into the soup.
- The Perfect Companion – Crispy Toast: Elevate your lentil soup experience with a substantial slice of homemade crispy toast. My favorite method involves slicing a good quality crusty bread into 1-inch thick pieces, lightly spraying both sides with olive oil, and then sprinkling them with a pinch of salt. Bake these slices at 400° Fahrenheit (200°C) until they turn a gorgeous golden brown, with edges that are slightly deeper in color but still tender. The contrast of the warm, thick soup with the crunchy, savory bread is simply irresistible.
- Stirring Matters: While cooking the aromatics in Sauté mode, stir frequently to prevent sticking and ensure even cooking. This helps to build the flavor base without burning.
- Natural Release vs. Quick Release: The recipe uses a “Natural Release 5 minutes, then Quick Release” technique. The initial natural release helps the soup settle and continue to cook gently, preventing foamy liquid from spurting out during quick release.

Variations and Customizations
This Instant Pot Lentil Soup is wonderfully versatile, allowing for numerous adaptations to suit your taste and dietary needs:
- Make it Vegetarian/Vegan: Easily transform this into a vegetarian or vegan dish by using high-quality vegetable stock instead of chicken stock. For serving, simply omit the fresh parmesan cheese or opt for a dairy-free parmesan alternative.
- Gluten-Free Option: Ensure your chicken or vegetable stock is certified gluten-free. Alternatively, you can use water as the liquid base. For serving, pair with a gluten-free bread for toast or enjoy the soup on its own.
- Spice it Up: If you love a bit of heat, add a pinch of red pepper flakes along with the other spices, or stir in a dash of your favorite hot sauce at the end.
- Add More Vegetables: Feel free to incorporate other quick-cooking vegetables. Diced zucchini, bell peppers, or even chopped kale can be added along with the spinach.
- Different Lentils: While red lentils are recommended for their quick cooking and creamy texture, you can experiment with brown or green lentils. Note that these varieties may require a slightly longer cooking time in the Instant Pot and will result in a firmer texture.
- Herbaceous Freshness: Fresh herbs like chopped parsley or cilantro make an excellent garnish, adding another layer of freshness and aroma just before serving.
Serving and Storage Suggestions
This Instant Pot Lentil Soup is a meal in itself, but a few thoughtful additions can make it even more delightful.
- Classic Pairing: As mentioned, crusty bread or perfectly toasted bread is the ultimate accompaniment, ideal for soaking up every last drop of the rich broth.
- Creamy Toppings: A dollop of plain yogurt, sour cream, or a swirl of coconut milk (for a vegan option) can add a lovely creamy counterpoint and cool down any spice.
- Fresh Garnishes: A sprinkle of fresh parsley or cilantro, a extra squeeze of lemon juice, or a dusting of freshly grated Parmesan cheese (or a dairy-free alternative) enhances both flavor and presentation.
- Heartier Meal: Serve alongside a simple green salad with a light vinaigrette for a balanced and satisfying meal.
Storage: Allow the soup to cool completely before transferring it to an airtight container. It can be refrigerated for up to 5-7 days.
Freezing: This soup freezes exceptionally well. Portion cooled soup into freezer-safe containers or bags, leaving some headspace for expansion. It can be frozen for up to 3 months. Thaw overnight in the refrigerator before gently reheating on the stovetop over medium-low heat, stirring occasionally, until warmed through. You may need to add a splash of water or stock to adjust consistency.
Frequently Asked Questions About Instant Pot Lentil Soup
Here are answers to some common questions you might have about making this delicious soup:
- Do I need to soak the lentils? No, absolutely not for this recipe! Red lentils cook quickly in the Instant Pot without any prior soaking, thanks to the pressure cooking method.
- Can I use different types of lentils? While red lentils are recommended for their creamy texture, you can use brown or green lentils. Be aware that they might require a slightly longer cooking time (add 2-3 minutes to pressure cooking time) and will result in a firmer soup texture.
- Why is my soup too thin/thick? If your soup is too thin, you can simmer it on the sauté setting for a few minutes after pressure cooking, stirring occasionally, to reduce and thicken it. If it’s too thick, add a little extra vegetable or chicken stock (or water) until it reaches your desired consistency.
- Can I make this soup spicier? Yes! Add a pinch of red pepper flakes with the other spices, or stir in a dash of cayenne pepper or your favorite hot sauce at the end for an extra kick.
- What if I don’t have an Instant Pot? While this recipe is optimized for the Instant Pot, you can make it on the stovetop. Sauté vegetables as instructed, then add lentils, spices, stock, water, and tomatoes. Bring to a boil, then reduce heat, cover, and simmer for 30-45 minutes, or until lentils are tender, stirring occasionally and adding more liquid if needed. Finish with spinach, lemon juice, and zest.

Pin Recipe
Servings: 6
Equipment
- Instant Pot or pressure cooker
Ingredients
- ¼ cup olive oil
- 1 medium onion, chopped
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 2 teaspoons paprika
- 2 bay leaves
- 2 cups dry red lentils
- 4 cups chicken stock (or vegetable stock)
- 2 cups water (or additional stock)
- 1 14.5-ounce can crushed tomatoes
- 3 cups spinach, roughly sliced (see Notes for slicing)
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon (see Notes for zesting)
- 1 ½ teaspoons salt
- Ground black pepper, to taste
- Toast for serving (see Notes for preparation)
- Fresh parmesan cheese, optional, for serving
Instructions
-
Set Instant Pot to Sauté mode and add olive oil. Heat oil over medium heat until warmed through, then add onions, carrots, and celery.
-
Cook vegetables, stirring constantly, until onion is tender, then stir in garlic, cumin, coriander, paprika, and bay leaves. Cook an additional 2 minutes, stirring to toast the spices.
-
After 2 minutes, stir in lentils, chicken (or vegetable) stock, water, and crushed tomatoes. Cover with lid and seal with valve in sealing position.
-
Set Instant Pot to Manual High Pressure for 10 minutes. Once the 10-minute cook time is up, allow a Natural Release for 5 minutes, then Quick Release any remaining pressure.
-
Carefully remove lid, then stir in spinach, fresh lemon juice, lemon zest, salt, and pepper. The spinach will wilt quickly into the hot soup.
-
Ladle the rich lentil soup into bowls (remember to remove bay leaves before serving) and serve warm with a side of crispy toast (as per Notes) and an optional sprinkle of fresh parmesan cheese.
Recipe Notes
- Salt Timing: Always add salt *after* the soup is done cooking. Adding it too early can cause the lentils to become tough.
- Bay Leaves: Bay leaves provide wonderful flavor, but they should be removed before serving as they are not pleasant to eat.
- Spinach Slicing: To roughly slice spinach, simply lay the leaves flat on a cutting board and rock your knife back and forth in one direction. No need for precision here!
- Lemon Zest Tips: For the easiest and most effective zesting methods, refer to my detailed post: All About Lemon Zest!
- Perfect Toast: For serving, slice a good loaf of crusty bread into 1-inch thick pieces. Lightly spray both sides with olive oil and sprinkle with a little salt. Bake at 400°F (200°C) until golden brown with slightly deeper brown edges.
- Vegetarian/Vegan Adaptations: Substitute chicken stock with vegetable stock or water. Omit parmesan cheese or use a dairy-free alternative for a vegan version.
- Gluten-Free Adaptations: Ensure your chicken or vegetable stock is gluten-free. Serve with gluten-free toast or skip the toast entirely.
- Instant Pot Size: This recipe was developed and tested in a 6-quart Instant Pot. If using a smaller Instant Pot, halve the recipe. For larger models, no ingredient quantity adjustments are typically needed, and the cook time remains the same.
