Ingredients

Instructions

To Prepare the Casserole
  1. Place the 16-ounce loaf of sourdough bread on a cutting board. Slice the loaf into 1-inch thick bread slices using a serrated bread knife.
  2. Once the entire loaf is sliced, stack 3 to 4 bread slices on top of each other. Slice the stack of bread in half lengthwise. Rotate the stack 90°, then slice the stack into 1-inch wide strips. Repeat this process until all sourdough has been sliced into strips.
  3. Lightly spray a 9×13 baking dish with cooking spray, ensuring to cover the bottom, sides, and inner corners of the dish thoroughly.
  4. Scatter the 3 tablespoons of cubed butter evenly across the bottom of the baking dish. Arrange the strips of bread in rows on top of the butter, allowing them to slightly overlap to fill the dish.
  5. Carefully slide the slices of 4 medium bananas between the strips of bread, distributing the banana slices evenly throughout the dish.
  6. Crack the 8 large eggs directly into a medium mixing bowl. Whisk the eggs vigorously until they are fully combined and the mixture is pale in color with no streaks of egg remaining.
  7. Add the 2 cups milk, ½ cup heavy whipping cream, ½ cup granulated white sugar, ¼ teaspoon cinnamon, and 2 teaspoons pure vanilla extract to the bowl with the whisked eggs. Whisk vigorously until all ingredients are fully incorporated and the custard is smooth.
  8. Pour the custard mixture into the baking dish, ensuring it completely and evenly covers the sourdough bread and bananas. Cover the baking dish tightly with aluminum foil and place the dish in the refrigerator. Chill the casserole for at least 2 hours, and no more than 12 hours, to allow the bread to soak thoroughly.
To Bake the Casserole
  1. Remove the baking dish from the refrigerator and remove the foil. Set the dish aside. Let the casserole rest at room temperature for 20 minutes to temper. Meanwhile, preheat your oven to 350° Fahrenheit (175°C).
  2. After the 20 minutes, add ⅔ cup granulated white sugar and 2 teaspoons cinnamon to a small mixing bowl. Mix the ingredients together until well blended. Sprinkle the cinnamon sugar mixture evenly over the top of the casserole.
  3. Cover the baking dish with a fresh piece of aluminum foil and place the dish in the preheated oven. Bake the casserole for 30 minutes.
  4. After 30 minutes, carefully remove the foil and discard it. Return the baking dish to the oven and continue baking for another 15 to 20 minutes, or until the custard is set (no longer jiggly in the center) and the toast is golden brown and beautifully puffy.
To Make the Strawberry Sauce
  1. While the casserole bakes uncovered, add the 1 pound of defrosted frozen strawberries, 1 teaspoon fresh lemon juice, and 2 tablespoons granulated white sugar to a medium saucepan. Place the saucepan on the stovetop over medium heat.
  2. Simmer the strawberry mixture over medium heat for about 10 minutes, stirring occasionally, or until the strawberries are very soft and the sauce has thickened slightly.
  3. When the strawberry mixture is ready, carefully transfer it to a blender, working in batches if necessary. Allow it to cool slightly in the blender for 2 to 3 minutes, then carefully secure the lid. Purée the mixture in the blender until the sauce is very smooth and luscious.
To Serve the Tonga Toast Casserole
  1. When the custard is set and the toast is golden and puffy, carefully remove the casserole from the oven. Set it aside to rest for 3 to 5 minutes. This allows the casserole to firm up slightly before serving.
