Ingredients

For the Chocolate Cookies

  • 2 cups fine-sifted almond flour (Blue Diamond from Costco is recommended)
  • 6 tablespoons unsweetened cocoa powder (¼ cup + 2 tablespoons)
  • ¼ cup tapioca flour
  • 1 tablespoon coconut flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup coconut sugar (ground fine in a blender or food processor)
  • ¼ cup organic shortening
  • 1 tablespoon coconut oil, melted
  • 1 large egg, beaten, at room temperature

For the Peppermint Filling

  • ½ cup coconut cream (see Notes for preparation)
  • ½ cup non-hydrogenated palm shortening
  • 1 teaspoon peppermint extract
  • 6 tablespoons maple sugar (¼ cup + 2 tablespoons)
  • 5 tablespoons tapioca flour (¼ cup + 1 tablespoon)

Instructions

For the Chocolate Cookies

  1. Preheat your oven to 300ºF (150ºC). Line cookie sheets with parchment paper.
  2. To make the cookie dough, add all the listed ingredients for the chocolate cookies, in the order they appear, into the bowl of a food processor. Pulse until a dough forms. The dough will have a crumbly texture, which is perfectly normal.
  3. Turn the dough mixture out onto a piece of plastic wrap. Divide it into two equal portions, form each into a ball, and then gently flatten each into a disc. Wrap each disc tightly in plastic wrap and chill in the refrigerator for approximately 10 minutes.
  4. Remove the chilled dough from the fridge, unwrap, and roll out each disc between two sheets of parchment paper to an even ⅛-inch thickness.
  5. Using a round cookie cutter, about 2 ½ inches wide, cut out your cookies. Place the cut-out cookies about 1 inch apart on the parchment-paper-lined cookie sheet. Return the cookie sheet to the fridge or freezer for another 5 to 10 minutes while you continue cutting the remaining dough.
  6. After the second chilling, place the cookie sheet into the preheated oven. Bake for about 15 minutes, or until the cookies feel firm to the touch. Important Note: If you start to smell a nutty aroma, it means your cookies are close to burning! Remove them from the oven immediately.
  7. Carefully transfer the baked cookies to a wire cooling rack and allow them to cool completely before proceeding. While they cool, prepare the peppermint filling.

For the Peppermint Filling

  1. Add the coconut cream, maple sugar, peppermint extract, and non-hydrogenated palm shortening to the bowl of your food processor. Process the mixture until it becomes very smooth and creamy.
  2. Gradually add the tapioca flour, 1 tablespoon at a time, blending thoroughly until smooth after each addition. Once all the tapioca flour has been incorporated, continue to process the mixture for another 5 minutes to ensure it is incredibly smooth and well combined.

To Assemble the “Oreos”

  1. Once the chocolate cookies are completely cooled, take one cookie and spread a scant tablespoon (or your preferred amount) of the peppermint filling on top. Then, gently sandwich another cooled cookie on top. Repeat this process until all your Paleo Peppermint Oreos are assembled.
  2. For best results, freeze the assembled cookies for about 5 to 10 minutes before serving. This brief chill allows the frosting to firm up nicely.

Notes

  • Coconut Cream: To easily obtain coconut cream, simply place a can of full-fat coconut milk in your refrigerator for at least one hour (or overnight for best results). When ready to use, remove it from the fridge, turn the can upside down, and open it with a can opener. Pour off the clear coconut water that will be on top, and the thick, solid white portion remaining is your coconut cream.
