Ingredients
- 8.5 ounce Barilla Ready Pasta Penne
- 1 cup frozen cauliflower rice
- 1 tablespoon frozen carrots
- 2 tablespoons almond milk, plus more to thin
- ¼ teaspoon garlic powder
- 1 teaspoon salt, to taste
- ½ cup shredded cheese
Instructions
- Place frozen cauliflower rice, carrots, and 2 tablespoons almond milk in a microwave-safe bowl. Microwave for 2 minutes or until hot, stirring thoroughly after the first minute.
- Carefully transfer the heated vegetable mixture to a blender. Add garlic powder and process until the mixture is very smooth and creamy. If necessary, add a little more almond milk to achieve your desired consistency.
- Season the creamy vegetable sauce with salt to taste. Scrape the sauce out of the blender and into a serving bowl.
- Sprinkle in the shredded cheese and stir well until the cheese is completely melted and the sauce is smooth and combined.
