Instant Pot Chicken Risotto: Creamy, Restaurant-Quality, and Effortless
Transform your weeknight dinner into a gourmet experience with this incredibly easy Instant Pot Chicken Risotto. Building upon the popularity of our classic Instant Pot risotto, this recipe elevates it further by incorporating tender, perfectly cooked chicken into a rich, creamy, and cheesy arborio rice masterpiece. Imagine indulging in a restaurant-quality meal, all prepared in a single pot with minimal fuss.

Before You Begin: Essential Instant Pot Risotto Tips
Mastering Instant Pot risotto is all about understanding a few key principles. These tips ensure your risotto turns out perfectly creamy and avoids common pitfalls.
- The Quick Release is Absolutely Crucial: This is the most vital step for achieving perfectly al dente risotto. Once the cooking time concludes, you must immediately and carefully perform a quick pressure release. Delaying this step, or worse, opting for a natural release, will lead to overcooked, mushy rice, compromising the signature creamy texture of true risotto. The Instant Pot cooks rice very quickly and efficiently, and the residual heat continues to cook the grains even after the pressure cycle ends. A quick release stops this process abruptly, preserving the ideal consistency.
- All Ingredients at Room Temperature: For the best results and even cooking, try to have your chicken broth and white wine at room temperature. Cold liquids can lower the Instant Pot’s temperature and extend the time it takes to come to pressure, which might slightly affect the final texture of the rice.
- Don’t Over-Stir (Until the End): Unlike traditional stovetop risotto that requires constant stirring, the Instant Pot handles the heavy lifting. Only stir at the specific stages outlined in the recipe to avoid breaking down the starch prematurely and ensure a perfectly balanced outcome.
- Accurate Measurements: Risotto, especially in a pressure cooker, benefits from precise measurements of liquid to rice. Stick to the recipe’s guidelines for the best creamy consistency.
How to Craft This Delectable Chicken Risotto
Crafting this elegant Instant Pot Chicken Risotto is surprisingly straightforward, turning complex flavors into an accessible home-cooked meal. Follow these steps for a dish that tastes like it came from a five-star kitchen.
Refer to the detailed recipe card below for precise measurements, ingredients, and full instructions.
Step 1: Sauté the Chicken to Golden Perfection
Begin by setting your Instant Pot to the Sauté mode. Allow 2 tablespoons of unsalted butter to melt completely in the inner pot. Once shimmering, add your boneless, skinless chicken breast, chopped into bite-sized pieces. Sauté the chicken until it’s beautifully browned on all sides and cooked through, reaching an internal temperature of 160°F. Browning the chicken not only cooks it but also develops a crucial depth of flavor that will infuse into the risotto. Once cooked, transfer the chicken to a separate bowl and set it aside; we’ll reintroduce it later to maintain its tenderness.
Chef’s Insight: Uniformity in your chicken pieces is key here. While perfection isn’t necessary, cutting the chicken breast into roughly equal bite-sized portions ensures they cook evenly and prevents some pieces from drying out while others are still cooking.
Step 2: Infuse Flavor with Sautéed Aromatics
Add another 2 tablespoons of unsalted butter to the Instant Pot. Once melted, introduce the chopped white onions. Sauté them, stirring occasionally, until they become soft and translucent, typically about 4 minutes. This process sweetens the onions and forms a foundational layer of flavor. Next, add the minced fresh garlic and continue to sauté for another 30 to 60 seconds, or until the garlic becomes fragrant, filling your kitchen with its inviting aroma. Be careful not to burn the garlic, as it can turn bitter quickly. Finally, add the arborio rice to the pressure cooker and stir diligently until every grain is thoroughly coated in the melted butter and aromatic mixture. This ‘toasting’ of the rice helps it absorb flavors and ensures a creamy, not gummy, texture.
Step 3: Deglaze for Deep Flavor and to Prevent “Burn” Warnings
Pour in the dry white wine (or your chosen substitute like water or chicken broth) and use a wooden spoon to vigorously scrape the bottom of the Instant Pot insert. This crucial step, known as deglazing, helps to loosen any caramelized bits of onion, garlic, or rice that may have stuck to the pot. These ‘fond’ bits are packed with flavor and contribute significantly to the risotto’s richness. Let the wine simmer for a couple of minutes, allowing its alcohol to cook off and its acidity to release even more flavor. Then, add the chicken broth and repeat the stirring and scraping process to ensure the pot is completely deglazed. This thorough deglazing is not just about flavor; it’s also essential to prevent the dreaded “Burn” notice on your Instant Pot, which can halt the cooking process.
Cheryl’s Crucial Tip: Never skip the deglazing step! If you neglect to scrape up the fond from the bottom of the pot, you are highly likely to encounter a “Burn” warning, stopping your cooking prematurely and potentially ruining your dish.
Step 4: The Magic of Pressure Cooking Risotto
With the Instant Pot thoroughly deglazed and ingredients combined, it’s time for the pressure cooking magic. Secure the lid onto your Instant Pot, ensuring the venting knob is set to the Sealing position. Select the Manual High Pressure (or Pressure Cook) mode and set the cook time to precisely 6 minutes. It’s important to remember that the Instant Pot will take approximately 10-15 minutes to come to full pressure before the 6-minute cook time begins. During this time, the internal temperature and pressure will build, allowing the rice to cook perfectly without constant stirring.
Step 5: Perfecting the Creaminess with Finishing Touches
As soon as the 6-minute pressure cooking cycle concludes, it is imperative to perform an immediate and careful Quick Release of the pressure. This stops the cooking process instantly, preventing the risotto from becoming overcooked. Once the float valve drops and the lid can be safely removed, open the Instant Pot. Stir the rice mixture vigorously. You’ll notice it starts out quite liquidy, but as you stir, the starches will release, and the liquid will rapidly absorb, transforming into that desired creamy consistency. Next, add the grated fresh Parmesan cheese and the final tablespoon of unsalted butter. Continue stirring until both are completely melted and smoothly incorporated, enriching the risotto with a luxurious, savory depth. Taste the risotto, and season generously with salt and freshly cracked black pepper as desired, adjusting to your preference. Once you’re satisfied with its exquisite flavor and texture, gently fold in the pre-cooked chicken pieces. Simmer briefly, just until the chicken is warmed through, ensuring it remains tender. Serve immediately for the ultimate experience!

Creative Variations for Your Instant Pot Risotto
While the classic Instant Pot Chicken Risotto is divine on its own, its versatility allows for exciting variations. Don’t hesitate to experiment and make this recipe truly your own:
- Classic Stovetop Risotto: No Instant Pot at hand? No problem! You can still enjoy a fantastic risotto. My comprehensive best EVER stovetop risotto recipe offers a foolproof, traditional alternative that delivers exceptional results with careful stirring and attention.
- Instant Pot Seafood Risotto: For a delightful oceanic twist, transform this into a succulent Instant Pot shrimp risotto! The cooking process remains largely the same. Instead of chicken, gently sauté medium-sized shrimp for 3-4 minutes, flipping them halfway, until they turn opaque and curl into a loose “C” shape. Overcooking shrimp will make them rubbery. Once cooked, transfer them to a bowl and proceed with the risotto recipe as written. Fold the cooked shrimp back into the finished risotto just before serving to ensure they remain tender.
- Earthy Chicken & Mushroom Risotto: To create an “Un-fung-ettable” Instant Pot chicken and mushroom risotto, introduce thinly sliced mushrooms to the Instant Pot after you’ve sautéed the onions and garlic. Cook the mushrooms, stirring them periodically, for about 3 to 4 minutes until they release their moisture and become tender and slightly browned. This step adds a wonderful umami depth. From there, continue with the recipe exactly as instructed. Consider using cremini, shiitake, or even a mix of wild mushrooms for a richer flavor profile.
- Popeye-Approved Spinach Risotto: Looking to incorporate more greens into your meal? Add 1-2 cups of fresh baby spinach leaves to the Instant Pot once all the liquid has been absorbed by the rice, just before adding the Parmesan and butter. Stir the spinach into the hot risotto for about 2 minutes, or until it has completely wilted. The residual heat of the risotto will cook the spinach perfectly without making it mushy. Then, proceed with adding the Parmesan and butter to finish the recipe, creating a vibrant and nutritious twist.
- Vegetarian Delight: Easily make this recipe vegetarian by omitting the chicken and using vegetable broth instead of chicken broth. For added protein and texture, consider adding extra sautéed mushrooms or roasted vegetables like asparagus or peas at the end.
- Spice It Up: For those who love a little heat, a pinch of red pepper flakes added with the garlic can introduce a subtle warmth, or a dash of hot sauce at the end for more intense spice.
Please note that making significant changes to any recipe carries the risk of altering the final outcome. While these substitutions and variations are suggested as simple, compatible modifications, results cannot be guaranteed. Always trust your judgment and taste.

- 1 ½ teaspoons salt (more or less to taste)
- ¼ teaspoon freshly cracked black pepper (more or less to taste)
Instructions
- Add 2 tablespoons unsalted butter to the Instant Pot insert and set the Instant Pot to Sauté mode. Allow the butter to melt completely.
- Once butter has melted, add 1 pound boneless, skinless chicken breast pieces to the insert. Cook the chicken for 3 to 4 minutes, stirring occasionally, until it is cooked through and lightly browned. Note: The internal temperature of the chicken should reach 160°F.
- Transfer the cooked chicken pieces to a large bowl and set aside.
- Add another 2 tablespoons unsalted butter to the Instant Pot insert and let it melt completely.
- Once butter has melted, add 1 cup chopped white onion and stir to incorporate. Sauté the onions, stirring occasionally, for 4 minutes or until they become translucent.
- When onions are translucent, add ½ tablespoon minced fresh garlic to the insert. Stir to incorporate, then sauté the mixture for another 30 to 60 seconds or until the garlic is fragrant.
- Add 1 ½ cups arborio rice to the insert. Stir all ingredients together until the rice is fully incorporated and coated in the melted butter and aromatics.
- Pour ½ cup dry white wine and 1 pinch saffron (if using) into the Instant Pot insert. Stir to incorporate, making sure to scrape up any ingredients that may have stuck to the bottom of the insert.
- Simmer the mixture for 2 to 3 minutes, allowing the wine to reduce slightly.
- After simmering, add 4 cups chicken broth and stir to incorporate. Again, ensure you dislodge any ingredients that may have stuck to the bottom or sides of the insert.
- Simmer the mixture for 1 minute. After 1 minute, secure the lid on the Instant Pot with the vent in the Sealing position.

- When the 6-minute cook time ends, immediately and carefully perform a Quick Release of the internal pressure. Remove the lid from the Instant Pot and set it aside.
- Stir the rice mixture vigorously until all liquid is fully absorbed and the mixture becomes creamy.
- Add 1 cup grated fresh Parmesan and 1 tablespoon unsalted butter to the insert. Stir until these ingredients are fully incorporated and the Parmesan is melted, creating a rich, smooth consistency.
- Once the Parmesan has melted, taste the risotto and add 1 ½ teaspoons salt and ¼ teaspoon freshly cracked black pepper, adjusting amounts of each as desired to achieve your preferred flavor. Stir well to incorporate.
- Turn off the Instant Pot. Return the cooked chicken to the Instant Pot insert. Gently fold the chicken into the risotto mixture and simmer just until the chicken is warmed through, ensuring it remains tender.
- Portion the chicken risotto into serving bowls. Top with additional Parmesan or finely chopped fresh parsley if desired for garnish. Serve warm and enjoy!
Recipe Notes
- Salt Adjustment: I highly recommend tasting the risotto after the Parmesan has melted, then adding salt and pepper as needed. Depending on the brand and sodium content of the chicken broth you use, you may find that the risotto requires less than the full 1 ½ teaspoons of additional salt. Adjust to your preference.
- Instant Pot Pressurization Time: It’s important to note that it can take anywhere from 10 to 15 minutes for your Instant Pot to fully pressurize before the actual cooking cycle begins. This timeframe can vary based on the age, model, and size of your appliance, as well as the initial temperature of your ingredients. This pressurization time is accounted for in the overall “Total Time” listed in the recipe card, so there’s no need to adjust your plans.
