Forget everything you thought you knew about s’mores. This Blackberry White Chocolate S’mores recipe takes the familiar comfort of a campfire classic and infuses it with a burst of fresh, vibrant flavor. It’s an easy-to-make dessert that’s equally impressive for a backyard barbecue, a cozy indoor evening, or a traditional camping trip. The contrast between the bright fruit, the rich chocolate, and the smoky marshmallow creates a harmony of tastes and textures that will leave you craving more long after the last bite.

A Sweet Tale: The Story Behind These Irresistible S’mores
Every great recipe has a story, and these Blackberry White Chocolate S’mores are no exception. The inspiration struck when blackberries came into their prime season, their plump, dark berries calling out for a creative culinary adventure. Coincidentally, I had an extra bag of marshmallows tucked away from a previous baking escapade – a humorous attempt at crafting burnt-marshmallow “shot glasses” for my sister’s birthday. It seemed only natural to combine these two delightful ingredients, but what else could elevate the experience?
The vision quickly formed: smashed blackberries, their vibrant juices mingling with gooey, melting white chocolate, all nestled atop a soft, slightly charred marshmallow, held together by two buttery, crunchy graham crackers. The mere thought was enough to set my taste buds tingling. Nothing, I concluded, could possibly be better. And so, the quest to create the ultimate s’more began.
However, no creative endeavor is without its minor domestic dramas. My partner, O, and I were in the midst of a rather silly disagreement – perhaps about over-indulging our beloved pup with peanut butter, a common contention in our household. So, I embarked on this s’mores mission solo, carefully gathering each ingredient. As the first batch came together, I took a bite, and I swear, a guttural moan escaped me – the kind that comes from pure, unadulterated joy. Another bite, another blissful sound. I continued, lost in the moment, until only a couple of s’mores remained. When I briefly left the room and returned, O was still maintaining his silent protest. But then I spotted it: a tell-tale smudge of sticky marshmallow clinging to his chin stubble.
“Did you eat my s’mores?” I inquired, fully aware of the answer. “No!” he adamantly replied, blissfully unaware of the incriminating evidence. My laughter erupted, and just like that, our petty quarrel melted away, replaced by shared smiles and the lingering taste of stolen s’mores. That, my friends, is the power of these incredible treats. Even when trying to maintain a stony silence, O couldn’t resist their allure. And that speaks volumes, especially since we both firmly believe we’re *always* right!

Why These S’mores Are a Summer Must-Have
Beyond amusing marital anecdotes, these s’mores are genuinely a revelation. They are the epitome of summer, offering a perfect blend of visual appeal and exquisite taste. Each component plays a crucial role in creating a balanced and deeply satisfying dessert. You’ll fall in love with the vibrant burst of fruity blackberries, harmonizing with the creamy, rich white chocolate. This dynamic duo is complemented by the fluffy, almost smoky sweetness of a perfectly toasted marshmallow, all held together by the buttery crunch of a graham cracker. It’s a symphony of textures and flavors that truly defines decadence.
The Sweet Tang of Blackberries
Blackberries, with their deep purple hue and unique balance of sweetness and tartness, are the star of this show. When gently smashed, they release their juicy essence, adding a fresh, bright counterpoint to the sweetness of the marshmallow and white chocolate. This fruity element transforms the traditional s’more from merely sweet to wonderfully complex, making each bite an exciting journey of flavor. Choosing ripe, in-season blackberries is key to achieving that perfect balance and maximizing their natural deliciousness.
Creamy White Chocolate Perfection
Unlike its darker counterparts, white chocolate brings a smooth, milky sweetness that complements the tartness of the blackberries without overpowering them. When melted, it becomes a luscious, velvety layer that binds the s’more together, adding a luxurious creaminess that is simply irresistible. The quality of your white chocolate truly matters here; a good quality white chocolate will melt beautifully and offer a richer, more nuanced flavor.
Pillowy Toasted Marshmallows
The marshmallow remains the heart and soul of any s’more. That iconic golden-brown, slightly crispy exterior giving way to a warm, gooey, stretchy interior is what makes s’mores so universally loved. In this recipe, the toasted marshmallow provides a fluffy, ethereal texture and a hint of caramelized sweetness that perfectly marries the fruit and chocolate. Achieving that ideal level of toastiness is a simple art, whether over an open flame or under a broiler.
The Crispy Graham Cracker Foundation
The unsung hero of the s’more is, undoubtedly, the graham cracker. Its subtle honey-like flavor and sturdy, crumbly texture provide the essential foundation, offering a satisfying crunch that contains the molten, fruity filling. Buttering the graham crackers before assembling adds another layer of flavor and helps achieve a beautiful golden crispness when gently warmed.

Indoor vs. Outdoor S’mores: Your Choice!
One of the beauties of this recipe is its adaptability. While traditional s’mores conjure images of roaring campfires and starry nights, these Blackberry White Chocolate S’mores are equally delightful when made indoors. You don’t need a sprawling campsite to enjoy this gourmet treat; a simple broiler in your kitchen will do the trick. The key is to achieve that perfectly toasted marshmallow, and both methods offer fantastic results.
For those rocking an open flame – be it a campfire, fire pit, or even a tabletop s’mores maker – simply toast your marshmallow to your desired level of golden perfection and proceed with traditional s’more assembly. The smoky char from an open fire adds an extra layer of rustic flavor that is truly unparalleled. Just be sure to watch those marshmallows carefully to avoid a fiery mishap!
If you’re making these indoors, the broiler or even a kitchen torch are your best friends. The recipe below provides specific instructions for an easy indoor method, ensuring that beautiful golden-brown marshmallow without the need for a roaring fire. I’ve included quantities for a single s’more to keep it simple, but you can easily multiply the ingredients to create a batch for your whole family or a crowd.
I even tested a variation of these when I unexpectedly forgot the marshmallows while making them for friends one weekend. We improvised, creating “open-face” s’mores, much like gourmet caviar toasts, but with a sweet twist. We simply buttered graham crackers, layered them with melty white chocolate, and topped them with a generous spoon of smashed blackberries. To my surprise, everyone absolutely loved them! They even seemed to doubt me when I insisted they were even better with a toasted marshmallow. I consider that a sign of how incredibly delicious these s’mores are, even in their simplified form.

Tips for Crafting the Perfect S’more
While making s’mores seems straightforward, a few tips can elevate your experience from good to absolutely phenomenal:
- **Ingredient Quality Matters:** Especially for the white chocolate. A high-quality white chocolate, like Ghirardelli squares or a premium white chocolate bar, will melt smoother and offer a richer flavor than standard baking chips.
- **Ripe Blackberries are Key:** Ensure your blackberries are ripe and sweet for the best flavor balance. Gently smashing them helps release their juices and makes for a more cohesive filling.
- **Don’t Over-Butter the Graham Crackers:** A light brush of melted butter is all you need. Too much butter can make them greasy.
- **Watch Your Marshmallow Closely:** Whether under a broiler or over a flame, marshmallows can go from perfectly golden to charred in seconds. Stay vigilant! For indoor broiling, keep the baking sheet on an upper rack and maintain a close watch.
- **Consider a Kitchen Torch:** If you want a perfectly browned, slightly crisp marshmallow without the risk of burning the graham cracker under the broiler, a kitchen torch is an excellent tool for precision toasting.
- **Serve Immediately:** S’mores are best enjoyed fresh off the heat, when the chocolate is molten, the marshmallow is gooey, and the graham crackers are warm and crisp.
Beyond the Classic: Delicious Variations
Once you’ve mastered the Blackberry White Chocolate S’mores, feel free to experiment with these delicious variations:
- **Mixed Berry Magic:** Try combining blackberries with raspberries or thinly sliced strawberries for a different fruity profile.
- **Citrus Zing:** Add a tiny pinch of lemon zest to your smashed blackberries for an extra bright note.
- **Nutty Crunch:** Sprinkle some finely chopped pistachios or almonds over the white chocolate before adding the marshmallow for added texture and flavor.
- **Coconut Kiss:** Toast some shredded coconut and sprinkle it on top for a tropical twist.
- **Dark Chocolate Decadence:** While white chocolate is fantastic here, a good quality dark chocolate square can also create an incredibly rich and satisfying s’more.

Microwave-safe plate
-
Small baking sheet
-
Kitchen torch optional
-
Spoon
Ingredients
- 2 ripe blackberries
- ½ tablespoon butter
- 1 graham cracker sheet split in half horizontally
- 1 white chocolate square approximately 1 ounce, see Notes
- 1 jumbo marshmallow
Instructions
-
Preheat broiler on high heat. Place blackberries in small bowl and gently smash blackberries with back of fork or cocktail muddler. Set bowl aside.
-
Place butter in small, microwaveable bowl and microwave in 30-second bursts, stirring between each, until butter is completely melted but not bubbling. Carefully remove bowl from microwave.
-
Place halved graham cracker sheet on microwave-safe plate. Use basting brush or pastry brush to brush melted butter on both sides of each graham cracker half.
-
Place white chocolate square on top of one graham cracker half. Set plate in microwave and microwave on 50% power 30 to 45 seconds, or until chocolate just begins to melt. Be careful not to microwave too long or graham crackers will burn.
-
Carefully remove plate from microwave. Transfer graham cracker with white chocolate to small baking sheet. Cover softened white chocolate with 1 marshmallow.
-
Place baking sheet under preheated broiler. Watching very closely, broil marshmallow 1 ½ to 2 minutes, or until marshmallow just starts to brown. Be careful not to broil too long or graham crackers will burn. For more-done marshmallows, finish toasting with kitchen torch.
-
Carefully remove baking sheet from broiler. Transfer graham cracker topped with chocolate and marshmallow to serving plate. Spoon smashed blackberries over top of toasted marshmallow. Cover with other graham cracker half and serve immediately.
- White Chocolate: Use a really good-quality white chocolate for the best results. I like Ghirardelli’s white chocolate squares, but you can also break up a white chocolate bar or use white chocolate chips.
