Instructions
For the Paleo Crust

- In a large mixing bowl, combine 1 cup fine blanched almond flour, ½ cup tapioca starch, ¼ cup coconut sugar, ¼ cup room temperature ghee, and 1 big pinch of salt. Stir these ingredients thoroughly until they are fully combined and form a cohesive crust dough.
- Transfer the prepared dough into your parchment-lined baking pan. Gently and evenly press the dough across the bottom of the pan, ensuring it covers the entire surface and extends into all corners to form an even base.
- Place the baking pan in the preheated oven and bake the crust for 20 minutes, or until it achieves a light golden-brown color around the edges. Carefully remove the pan from the oven. Important Note: Begin preparing the lime filling immediately while the crust is baking; do not wait for the crust to finish.
For the Paleo Lime Filling
- In a second large mixing bowl, add 6 large egg yolks and 2 large whole eggs. Whisk them vigorously for approximately 5 seconds until the yolks and whole eggs are thoroughly combined and slightly frothy.
- Pour ½ cup maple syrup into the egg mixture and whisk again until all ingredients are just incorporated.
- Add ⅔ cup freshly squeezed lime juice and the zest from 2 large limes to the egg mixture. Whisk until all components are fully combined and the mixture is smooth.
- Transfer the entire egg and lime mixture into a heavy saucepan (preferably stainless steel, glass, or ceramic) and place it on your stovetop over medium-low heat.
- Add 4 tablespoons of room temperature ghee to the saucepan. Stir the mixture constantly with a wooden spoon.
