Ingredients

  • 4 slices bacon
  • 5-6 large jalapeño peppers (approximately 1–1 ¼ pounds; stem and seeds removed, peppers minced)
  • 1 half of one small onion (chopped; approximately ¼ cup)
  • 4 cloves garlic (minced)
  • 4 cups low-sodium chicken broth (or vegetable broth)
  • ½ teaspoon cumin
  • 1 ½ teaspoons salt (more or less to taste)
  • 1 pound gold potatoes (peeled, cut into bite-sized pieces)
  • 8 ounces full-fat cream cheese (at room temperature, cubed)
  • 1 cup shredded fresh cheddar cheese (at room temperature)
  • 2 tablespoons freshly squeezed lemon juice (plus more to taste)

Instructions

  1. Place 4 slices of bacon on a cutting board. Chop each slice of bacon into ½-inch pieces, then transfer the bacon to a large, heavy-bottomed pot.
  2. Place the pot on the stovetop over medium heat and cook the bacon, stirring occasionally, until the bacon pieces are crisp but not burnt. While the bacon cooks, line a medium plate with 2 to 3 layers of paper towels and set aside.
  3. Use a slotted spoon to transfer the cooked bacon to the plate lined with paper towels. Set aside. Do not drain the pot, as the rendered bacon fat will be used for sautéing.
  4. Add the 5-6 large minced jalapeño peppers and 1 half of one small chopped onion to the pot with the bacon fat. Stir to incorporate, then cook these ingredients for about 5 minutes or until the onions are translucent and the jalapeños are dark green and very soft. Stir occasionally to prevent sticking or burning. This step softens the peppers and mellows their heat.
  5. Once the onions and jalapeños are ready, add the 4 minced cloves of garlic to the pot. Stir to incorporate, then sauté the ingredients for 1 minute or until the garlic is fragrant. Be careful not to burn the garlic.
  6. Add the 4 cups of low-sodium chicken broth (or vegetable broth) to the pot and stir to incorporate. Make sure to scrape the bottom of the pot with your wooden spoon to dislodge any flavorful bits of food that may have stuck, deglazing the pot and adding depth to the soup.
  7. Add the ½ teaspoon of cumin, 1 ½ teaspoons of salt, and 1 pound of peeled, bite-sized gold potatoes to the pot. Stir everything together to combine, then increase the heat to medium-high. Bring the liquid to a rolling boil, then immediately reduce the heat to medium-low to maintain a gentle simmer.
  8. Simmer the soup, stirring occasionally to prevent sticking, for approximately 20 minutes or until the potatoes can be easily pierced with a fork, indicating they are tender and fully cooked.
  9. When the potatoes are ready, place the 8 ounces of cubed, room-temperature full-fat cream cheese in a medium mixing bowl. Ladle about one cup of hot broth from the pot into the mixing bowl with the cream cheese. Whisk well until the cream cheese has completely melted and is fully incorporated into the broth, creating a smooth mixture. This tempering step prevents the cream cheese from seizing or clumping when added to the hot soup.
  10. Transfer the cream cheese mixture back into the main pot of soup and stir thoroughly to incorporate. Remove the pot from the heat and allow the soup to cool slightly for a few minutes. Then, add the 1 cup of shredded fresh cheddar cheese and the 2 tablespoons of freshly squeezed lemon juice. Stir until the shredded cheese has completely melted into the soup, creating a rich, cheesy consistency. Taste the soup and adjust the salt, cumin, and lemon juice as desired to perfect the flavor profile.
