Irresistible Vegan “Chicken” Nuggets with Spicy Sriracha Mayo
Embracing a plant-based lifestyle doesn’t mean sacrificing your favorite comfort foods. While some might aspire to a diet solely composed of lentils, kale, and farro, the reality for many, including myself and my partner O, is a continued craving for those delightful, savory, and satisfying bites. And let’s be honest, few things hit the spot quite like crispy, golden “chicken” nuggets, especially when paired with a creamy, spicy sriracha mayo. It’s a true story – we love these vegan nuggets!
Our journey to perfecting these plant-based nuggets began during a memorable visit to Whole Foods. O, with his keen eye for deliciousness, discovered their chicken-fried tofu in the “fill it up for $12” bowl section. I was busy proudly packing my bowl to an impressive 2.25 pounds (which even yielded amazing leftovers!), but O was immediately captivated by the crispy, golden cubes. He loaded up his bowl with them, and not long after, he was begging me to recreate them at home. Who could possibly say no to such a request?

The Secret to Perfectly Chewy Vegan Nuggets
The key to achieving that incredibly chewy, “meaty” texture that truly mimics traditional chicken nuggets lies in a simple yet often overlooked tofu preparation method: freezing and thawing. When a block of extra-firm tofu is drained, frozen solid, and then thawed, its internal structure undergoes a fascinating transformation. The ice crystals that form within the tofu create small pockets, effectively pressing out more water when thawed and leaving you with a denser, spongier, and more fibrous texture. This isn’t just a trick; it’s a game-changer for tofu’s versatility, making it ideal for absorbing flavors and holding up to frying without crumbling.
Once you’ve mastered the freezing and thawing technique, the next step is to infuse those lovely tofu cubes with a rich, savory flavor. For our “chicken” nuggets, we marinate the prepared tofu in a double-strength vegan “chick’n” broth. Using bouillon to create a robust, concentrated broth ensures every bite is packed with that familiar, comforting chicken-like essence. This long soak, ideally overnight in the refrigerator, allows the tofu to become a flavorful sponge, ready to be transformed into golden-brown perfection.
Finally, a simple yet effective flour coating, seasoned with a blend of complementary spices, gives these nuggets their irresistible crispy exterior. Tossed and fried until golden, these tofu “chicken” nuggets are the ultimate finger food and a wonderfully guilt-free pleasure. And what’s a nugget without a fantastic dipping sauce? Our homemade sriracha mayo, a creamy and spicy delight made from combining vegan mayonnaise (like Vegenaise) with just the right amount of sriracha, elevates these nuggets to an unforgettable culinary experience.

Servings: 4
Ingredients
For the Tofu “Chicken” Nuggets
- 1 14-ounce block extra-firm tofu, drained, frozen, and then thawed
- 2 cups vegan broth (double-strength chicken flavored, from bouillon)
- ¼ cup vegetable oil
For the “Breading”
- ½ cup all-purpose flour
- 3 tablespoons nutritional yeast
- 1 teaspoon salt (more or less to taste)
- ½ teaspoon freshly ground black pepper (more or less to taste)
- 1 teaspoon poultry seasoning
- ½ teaspoon dried garlic
- ½ teaspoon dried minced onion
- ½ teaspoon cayenne pepper
For the Sriracha Mayo
- ¼ cup vegenaise (or other vegan mayo)
- Sriracha, to taste
Instructions
- Cube tofu that’s been drained, frozen, and thawed. Place tofu into a shallow pan, and pour broth over the top, making sure tofu is covered. Set aside to soak overnight (or for at least a couple hours), refrigerated.
- Meanwhile, prepare the sriracha mayo. Spoon out about 1/4 cup vegenaise (or your preferred vegan mayo) into a small bowl. Add a bit of sriracha, stir well, and taste. Adjust with more sriracha until you reach your desired level of spiciness and flavor.
- Once the tofu has thoroughly marinated, in a separate shallow dish, stir together the all-purpose flour, nutritional yeast, salt, pepper, poultry seasoning, dried garlic, dried minced onion, and cayenne pepper until well combined. This is your “breading” mixture.
- Heat ¼ cup of vegetable oil in a large skillet over medium-low heat. While the oil heats, remove the marinated tofu from the broth. Transfer a few cubes at a time into the breading mixture. Toss gently to ensure each cube is completely coated.
- Carefully place the breaded tofu cubes into the hot oil. Fry in batches, without overcrowding the pan, until crisp and golden brown on all sides. Each side should take approximately 2-3 minutes.
- Once fried, remove the tofu nuggets from the oil and place them on a wire rack with paper towels underneath to catch any excess oil drips.
- Serve immediately with the freshly made sriracha mayo. Enjoy!

Tips for Achieving the Ultimate Crispy Tofu Nuggets
Crafting perfect vegan chicken nuggets is an art, but one that is easily mastered with a few key techniques. Beyond the essential freezing and thawing step, here are some additional tips to ensure your tofu nuggets turn out flawlessly every time:
- Press Your Tofu Properly: Even after freezing and thawing, it’s beneficial to give your tofu a good press to remove any remaining excess water. This step helps the tofu absorb more marinade and ensures a crispier fry. You can use a dedicated tofu press or simply wrap the block in paper towels and place a heavy object (like a cast iron pan) on top for at least 30 minutes.
- Don’t Rush the Marinade: The overnight soak truly makes a difference. The longer the tofu soaks in the double-strength broth, the more flavor it absorbs, leading to a richer, more satisfying taste. If you’re short on time, aim for at least two hours, but overnight is highly recommended.
- Maintain Oil Temperature: When frying, temperature control is crucial. If the oil isn’t hot enough, the nuggets will absorb too much oil and become greasy. If it’s too hot, the coating will burn before the tofu has a chance to crisp up. Aim for a medium-low heat, and if you have a thermometer, around 350-375°F (175-190°C) is ideal.
- Fry in Batches: Avoid overcrowding the skillet. Frying too many nuggets at once will lower the oil temperature, leading to soggy results. Give them space to brown evenly and get crispy.
- Alternative Cooking Methods: While frying yields the crispiest results, you can also bake or air fry these nuggets for a lighter option.
- Baking: Arrange breaded nuggets on a parchment-lined baking sheet. Drizzle lightly with oil or spray with cooking spray. Bake at 400°F (200°C) for 20-25 minutes, flipping halfway, until golden brown and crispy.
- Air Frying: Preheat your air fryer to 375°F (190°C). Spray the basket and nuggets with cooking spray. Air fry for 12-15 minutes, shaking the basket halfway through, until crispy and browned.
- Seasoning Adjustments: Feel free to experiment with the breading spices. Add a pinch of smoked paprika for a smoky depth, onion powder for a more pronounced savory note, or a touch more cayenne if you like extra heat.

Frequently Asked Questions About Vegan Tofu Nuggets
Do I really need to freeze the tofu?
Yes, freezing and thawing the tofu is a crucial step for achieving the best texture. It makes the tofu chewier and more porous, allowing it to better absorb the marinade and crisp up beautifully when fried. While you can skip it, the results won’t be quite the same.
Can I bake these instead of frying?
Absolutely! For a healthier option, you can bake or air fry the nuggets. Instructions are provided in the “Tips for Achieving the Ultimate Crispy Tofu Nuggets” section above. They will still be delicious, though the crispiness might be slightly different from deep-frying.
How long do marinated tofu cubes last in the refrigerator?
Marinated tofu cubes can be stored in an airtight container in the refrigerator for up to 2-3 days. This makes them a great option for meal prep!
Can I prepare the breaded tofu ahead of time?
It’s best to bread the tofu just before frying or baking to prevent the coating from becoming soggy. If you need to prep ahead, keep the seasoned flour mixture separate from the marinated tofu.
What if I don’t have nutritional yeast?
Nutritional yeast adds a cheesy, umami flavor that enhances the “chicken-like” taste. While it’s highly recommended, if you don’t have it, you can still make the nuggets. You might consider adding a pinch more savory spices like onion powder or garlic powder to compensate for the flavor depth.
