Ingredients

  • 1 ½ cups almond flour
  • 2 tablespoons coconut flour
  • ½ teaspoon baking soda
  • 1 pinch salt more or less to taste
  • 1 pinch ground cinnamon
  • ½ teaspoon ground ginger
  • 1 teaspoon grated fresh ginger
  • 3 large eggs at room temperature
  • cup refined coconut oil melted and cooled
  • cup honey
  • 2 teaspoons pure vanilla extract
  • ½ cup grated carrots
  • 1 cup diced peaches fresh or frozen

  • Preheat your oven to 350°F (175°C). Line a muffin tin with 10 muffin liners, ensuring they are evenly spaced.
  • In a medium-sized mixing bowl, combine all the dry ingredients: almond flour, coconut flour, baking soda, salt, ground cinnamon, and ground ginger. Whisk them thoroughly to ensure they are well-incorporated and there are no clumps.
  • In a separate, larger bowl, whisk together the wet ingredients: room-temperature eggs, melted and cooled refined coconut oil, honey, and pure vanilla extract. Continue whisking until the mixture is smooth and well combined.
  • Gradually add the dry ingredient mixture to the wet mixture. Whisk gently until the batter is smooth and no dry streaks or lumps remain. Be careful not to overmix. Finally, gently fold in the freshly grated carrots and diced peaches until just combined.
  • Evenly scoop the muffin batter into the prepared muffin liners, filling each almost completely full. This generous filling will help create those lovely, domed tops. Bake for 20-27 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Note: smaller muffins may bake in about 20 minutes, while larger, bakery-style muffins might require closer to 27 minutes. Adjust baking time as needed for your oven and muffin size.
  • Allow the muffins to cool in the tin for about 5 minutes before carefully transferring them to a wire rack to cool completely. This helps prevent them from becoming soggy and ensures a perfectly tender texture.
