- 10 cups water more or less as needed
- 6 large whole jalapeño peppers approximately 1-2 ounces each
- 3 large cloves garlic peeled
- ½ cup avocado oil or other neutral-flavored oil
- 1 ½ teaspoons salt more or less to taste
- 1 small white onion approximately 4 ounces, optional
- 3 tablespoons fresh cilantro leaves optional
Instructions
- Fill a medium pot with approximately 10 cups of water. Adjust the amount of water based on the size of your pot and the number/size of your jalapeños to ensure they are fully submerged.
- Place the pot on the stovetop over high heat. Bring the water to a rapid, rolling boil.
- Once the water is boiling, carefully add the 6 large whole jalapeño peppers to the pot. Immediately reduce the heat to low to maintain a gentle simmer.
- Simmer the jalapeños until they are very tender, which should take approximately 10 to 15 minutes. They should be soft when gently pressed.
- When the peppers are tender, carefully pour the water and peppers into a colander to drain thoroughly. Transfer the drained jalapeños to a cutting board to cool slightly.
- Once cool enough to handle, carefully cut off the stems of the jalapeño peppers and discard them. If you prefer a milder salsa, slice each jalapeño open and remove the inner core, white ribs, and seeds. Leave them in for more heat.
- Place the prepared peppers in a blender. Add the 3 large peeled garlic cloves, ½ cup avocado oil, 1 ½ teaspoons salt, the optional 1 small white onion, and the optional 3 tablespoons fresh cilantro leaves.
- Secure the lid on the blender and blend all ingredients until a completely smooth, creamy mixture is formed. Pause the blender and use a silicone spatula to scrape down the sides of the bowl if necessary to ensure even blending. Note: If the salsa is too thick for your liking, blend in additional avocado oil one tablespoon at a time until your desired consistency is achieved.
