Paleo Double Chocolate Fudge Cookies Recipe

These Paleo Double Chocolate Fudge Cookies are seriously chocolatey and gooey. Pair these easy, kid-friendly Paleo cookies with a glass of coconut or nut milk and you will be in dessert heaven.
Yields: 24 cookies
Ingredients
- 1 ½ cups almond flour
- ¼ cup tapioca starch
- ¼ cup cacao powder
- ¼ cup coconut sugar
- ½ tsp baking soda
- pinch sea salt
- 2 eggs
- ½ cup cashew butter
- ¼ cup melted coconut oil
- 2 tbsps honey
- 1 tbsp organic vanilla extract
- ⅓ cup dairy and soy free chocolate chips
Instructions
- Preheat your oven to 350F.
- Add all the ingredients, except the chocolate chips, to your standing mixer and blend on low until smooth.
- Stir in the chocolate chips by hand with a spoon.
- Line 2 baking sheets with parchment paper.
- Form the dough into 1.5″ balls, using your hands and place them on the cookie sheet – TIP: Wet your hands every 2-3 cookies to make the dough easier to work with.
- Place the cookie sheets in the oven and bake for 8-9 minutes (until the bottoms of the cookies are golden – you don’t want to overcook these).
- Remove from the oven and let cool for a few minutes.
- Serve and enjoy!
