Why These Whole30 Instant Pot Mashed Potatoes Will Become a Family Favorite
There’s a special kind of magic when a dish earns its place in your family’s culinary lexicon, becoming known by the name of its creator. Think of “Grandma’s Secret Stuffing” or “Dad’s Famous BBQ Ribs.” These are the recipes that evoke warmth, tradition, and pure comfort. For years, in my family, it was “Cheryl’s Mashed Potatoes” – an indulgent, rich, and creamy concoction loaded with cream cheese, sour cream, snipped chives, and real butter, typically reserved for special occasions like Thanksgiving. While absolutely divine, they certainly didn’t fit into a Whole30 or Paleo eating plan.
But what if you could achieve that same level of creamy, garlicky, herb-infused decadence without any dairy or unhealthy additives? Enter these incredible Whole30 Instant Pot Mashed Potatoes with Garlic and Herbs. This recipe captures the essence of those beloved, comfort-food mashed potatoes while being entirely compliant with Whole30 and Paleo guidelines. It’s lactose-free and even offers a simple vegan option, ensuring everyone at your table can enjoy this holiday classic. (And yes, for those on a primal plan, white potatoes are often considered compliant when customized to your individual needs – I’m a firm believer in making your paleo journey work for you!).

The beauty of this recipe lies in its elegant simplicity and the surprisingly deep flavor profile it delivers. You might be skeptical that a dairy-free version could rival traditional mashed potatoes, but prepare to be amazed. The secret weapon here is the infusion of ghee (or vegan margarine) with fresh garlic and fragrant herbs like rosemary or thyme. This step takes the flavor from good to extraordinary, creating a base that’s rich, savory, and incredibly aromatic. It’s a small technique that yields monumental results, transforming simple potatoes into a gourmet side dish.
Beyond the incredible taste, the sheer ease of preparation is a game-changer, especially during busy holiday seasons. With your Instant Pot, you can have perfectly mashed potatoes on the table in minutes. The process is straightforward:
- Peel and chop your potatoes.
- Pressure cook them until tender.
- Infuse ghee with garlic and herbs on the stovetop.
- Mash everything together with creamy coconut milk.
No fuss, no lengthy boiling times, just pure mashed potato perfection. This efficiency is precisely why the Instant Pot has revolutionized my kitchen, making healthy, home-cooked meals more accessible than ever before, especially when adhering to specific dietary plans like Whole30 or Paleo.

If you’re still on the fence about getting an Instant Pot, consider this your sign. It’s truly a kitchen essential that simplifies cooking, cuts down on meal prep, and opens up a world of possibilities for healthy, delicious dishes. For anyone committed to Whole30 or Paleo, an Instant Pot is a lifesaver, dramatically reducing the time spent in the kitchen without compromising on the quality or freshness of your food. From quick weeknight dinners to elaborate holiday spreads, it handles it all with remarkable efficiency. In fact, I’m even releasing a Paleo Instant Pot Cookbook soon, packed with Whole30-approved recipes designed to make your dietary journey even smoother. It’s more than just a kitchen appliance; it’s my kitchen soulmate!
These garlic herb mashed potatoes aren’t just for Thanksgiving; they are perfect for any occasion where you crave comfort food that’s both nourishing and delicious. Whether you’re serving them alongside a perfectly roasted chicken, a tender beef roast, or simply enjoying them as a standalone treat, their creamy texture and vibrant flavor will leave everyone asking for the recipe. The unique infusion method with ghee, garlic, and fresh herbs is a technique I picked up from Pinch of Yum, and it truly makes all the difference, creating a depth of flavor that’s hard to beat. You could skip this step, but why would you want to miss out on such incredible taste?

So, as you plan your holiday menu, or simply look for a spectacular side dish to add to your repertoire, consider these Whole30 Instant Pot Mashed Potatoes. They’re a testament to the fact that healthy eating doesn’t mean sacrificing flavor or enjoyment. What will you be serving on your Thanksgiving table this year?

Whole30 Instant Pot Mashed Potatoes with Garlic and Herbs (Paleo, Vegan Option)
Ingredients
- 2 pounds red or Russet potatoes see Notes
- 1 cup water
- 1 teaspoon salt
- ¼ cup ghee use vegan margarine for vegan option
- 2-3 cloves garlic peeled and smashed
- 2 sprigs fresh rosemary or thyme
- 2 tablespoons olive oil
- ½ cup full-fat coconut milk
- almond milk as needed
- 1 tablespoon freshly cracked black pepper
- 1 tablespoon chives minced, for garnish
Instructions
-
On low heat, melt ghee in a small skillet. Add garlic and fresh herbs and let infuse for about 10 minutes over low heat. Be careful not to let anything get too hot or burn!
-
Meanwhile, prepare your potatoes: if using red potatoes, peel about 1/2 or 2/3 and quarter. If using Russet, peel all and dice into about 1″ pieces. Make sure pieces are evenly sized. Place potato pieces on a trivet in the Instant Pot and cover with 1 cup water. Seal and cook on Manual High Pressure for 8 minutes. Quick Release as soon as the timer beeps, then drain. Return potatoes to the Instant Pot or a medium serving bowl.
-
Add coconut milk, olive oil, and 1/4 cup almond milk to the skillet with the infused ghee and heat through. Stir to combine, though the ghee and milk may remain somewhat separate; this is normal. When heated through, pour over potatoes and mash with a potato masher. Add salt and more almond milk until you reach your desired creamy texture.
- Russet potatoes produce fluffier mashed potatoes, but I personally love the creaminess of red potatoes and the texture from keeping some skins on. I like to keep some of the peels on for added nutrition and texture, but you can peel all of them, if you prefer. I highly recommend peeling all Russet potatoes, if that is the variety you choose.
