  • 2 tablespoons yellow mustard
  • ½ cup mayonnaise

For the Chicken Nuggets

  • 1 pound boneless, skinless chicken breasts cut into 1-inch chunks
  • 1 cup dill pickle juice
  • 1 ½ cups milk divided, see Notes
  • 1 large egg
  • 1 ½ cups all-purpose flour or gluten-free all-purpose flour
  • 2 tablespoons confectioners’ sugar or Swerve Confectioners’
  • kosher salt to taste
  • freshly ground black pepper to taste

Instructions

For the “Chick-Fil-A Sauce”

  • In a small bowl, whisk together honey, barbecue sauce, yellow mustard, and mayonnaise until all ingredients are well combined and smooth. Cover the sauce and let it chill in the refrigerator for at least 30 minutes, or until you’re ready to serve, allowing the flavors to meld.

For the Chicken Nuggets

  • In a large bowl, combine the 1-inch chicken breast pieces, dill pickle juice, and ½ cup of milk. Stir gently to ensure all chicken pieces are submerged. Allow the chicken to marinate in this pickle juice mixture for a minimum of 30 minutes. For enhanced flavor and tenderness, you can marinate for up to 8 hours in the refrigerator. Once marinating time is complete, drain the chicken very well, discarding the marinade.

Add the drained, marinated chicken pieces to the egg wash and stir to ensure each piece is fully coated. Once coated, gently drain any excess milk mixture from the bowl.

  • Preheat your air fryer to 400° Fahrenheit (200°C) according to the manufacturer’s instructions. In a gallon-sized Ziploc bag (or a third large bowl), combine the all-purpose flour, confectioners’ sugar, kosher salt, and freshly ground black pepper. Add the egg-washed chicken pieces to the bag and seal it securely, expelling as much air as possible. Vigorously toss and shake the bag to thoroughly coat each chicken piece in the seasoned flour mixture. Ensure an even, thin layer of breading.
