Paleo Chocolate Cups with Caramel (Vegan)

These paleo chocolate cups with caramel are rich and stuffed with a quick but delicious caramel (made in the Instant Pot!). These paleo chocolate cups with caramel are the perfect healthy candy, and I don’t know anyone who wouldn’t like a couple of these paleo chocolate cups with caramel for Halloween. Easy but impressive!

Ingredients

  • ½ – ⅔ cup paleo caramel sauce homemade preferred (see notes for options)
  • 10 ounces dairy-free chocolate chips
  • 1 tablespoon + 2 teaspoons coconut oil
  • 1-2 tbsp Fleur de sel for topping

Instructions

 

  • Melt the Chocolate: In a medium, microwave-safe bowl, combine your dairy-free chocolate chips with coconut oil. Microwave in short 30-second bursts, stirring thoroughly after each interval to prevent burning. Stop microwaving as soon as the mixture is smooth and fully melted. Alternatively, you can use a double-boiler over simmering water for a gentler melting process. This method ensures your chocolate remains silky and smooth.
  • Form the Chocolate Shells: Line a standard muffin tin with 12 paper liners (silicone liners work wonderfully here as well). Spoon approximately 1 teaspoon of the melted chocolate mixture into the bottom of each lined cup. Using the back of the teaspoon, gently press and spread the chocolate up the sides of the liners, creating an even shell. Ensure the bottom is well-covered. Repeat this for all 12 liners, then transfer the muffin tin to the freezer for about 10 minutes to allow the chocolate to set firmly.
  • Add the Caramel Filling: Once the chocolate shells are set, retrieve the muffin tin from the freezer. Spoon about 1/2 tablespoon of your prepared paleo caramel sauce into each chilled chocolate cup. Distribute the caramel evenly across all cups. If the caramel is a bit thick, you can gently flatten it with your fingers or the back of a small spoon to create a smooth layer, ensuring it sits neatly within the chocolate shell.
  • Seal and Garnish: Carefully spoon another 1 to 1 1/2 teaspoons of the remaining melted chocolate over the caramel filling in each cup, ensuring the caramel is fully covered and sealed. Once topped, immediately sprinkle a tiny pinch of Fleur de sel over the top of each chocolate cup for that perfect sweet and salty contrast. Return the muffin tin to the freezer for another 10 minutes to allow the top chocolate layer to set completely.
  • Enjoy and Store: Once fully chilled and set, gently peel off the paper liners (or pop them out of silicone liners). Your beautiful paleo chocolate cups with caramel are ready to be enjoyed! For optimal freshness and texture, store them in an airtight container in the refrigerator. They make a fantastic make-ahead dessert or a thoughtful homemade gift.
