👩🏼🍳 Expert Chef’s Tips for a Perfect Fajita Casserole Every Time
Achieving a perfectly moist and flavorful chicken fajita casserole is simple with a few expert tips. These insights will help you avoid common pitfalls and ensure your dish is a resounding success:
- Mastering Chicken Cooking: The key to tender chicken is precise cooking. Since you’ll be slicing the boneless, skinless chicken breasts into thin strips or bite-sized chunks, they will cook much faster than larger pieces. When sautéing on the stovetop, cook the chicken just until it’s opaque and lightly golden in spots, about 3-4 minutes. Remember, it will continue to cook in the oven for an additional 15-20 minutes. If the chicken is fully cooked before it goes into the oven, it will inevitably become dry and tough. A slightly undercooked chicken when mixed with the sauce is ideal, as the oven baking will bring it to perfect tenderness without overcooking.
- Effortless Meal Prep Solution: This chicken fajita casserole is a dream come true for meal prepping. Follow the recipe instructions precisely to cook the casserole to completion. Once it’s done, allow it to cool completely to room temperature. Then, divide the casserole into individual portions and store them in airtight containers. Properly stored in the refrigerator, these portions will stay fresh and delicious for up to 4 days. When you’re ready to enjoy, simply reheat in the microwave until thoroughly warmed through, stirring occasionally to ensure even heating. This makes healthy, delicious meals readily available throughout your busy week.
- Enhancing Flavor with Seasoning: While the recipe calls for 1 tablespoon of fajita seasoning, feel free to adjust this to your taste. For a bolder flavor, you can add an extra half teaspoon or even a full teaspoon of seasoning. If you like a little heat, consider incorporating a pinch of cayenne pepper or a dash of hot sauce into the cream sauce. You can also customize your fajita seasoning by adding a bit more cumin, chili powder, or smoked paprika to suit your preference.
- Creating the Perfect Cheese Crust: For an irresistible, bubbly, and slightly crispy cheese topping, make sure to spread the final layer of shredded cheese evenly across the casserole. For an extra golden-brown finish, you can switch the oven to broiler mode for the last 1-2 minutes of baking, but watch it closely to prevent burning.

- 1 medium onion thinly sliced
- 2 medium bell peppers cores removed, thinly sliced; see Notes
- 1 ½ pounds boneless, skinless chicken breasts cut into thin strips or bite-sized chunks
- 1 8-ounce block cream cheese at room temperature
- 1 ½ cups shredded cheese Mexican cheese blend preferred, divided
- 1 tablespoons fajita seasoning or taco seasoning, store-bought or make your own
- 1 tablespoon minced garlic
- 1 teaspoon smoked paprika
- ½ teaspoon salt more or less to taste
Suggested Toppings (All Optional)
- 2 tablespoons chopped fresh cilantro
- sour cream
- pico de gallo
- guacamole store-bought or make your own
Instructions
-
Preheat oven to 375° Fahrenheit.
-
Heat a cast-iron or other oven-safe skillet on the stovetop over medium heat. Once the pan is warm, add 1 tablespoon of avocado oil. Swirl or tilt the skillet to distribute the oil across the entire surface, and continue heating until the oil is hot and shimmery.
-
When the oil is hot, add the sliced onion and bell peppers to the skillet. Cook, stirring occasionally, until the vegetables are tender and softened, approximately 7 to 8 minutes. Transfer the sautéed peppers and onions to a large plate and set aside.
-
Add the remaining 1 tablespoon of avocado oil to the skillet and swirl the pan to coat. Heat the pan until the oil is hot and shimmery, then add the chicken to the skillet. Cook chicken for 3 to 4 minutes, stirring once or twice, until the chicken is opaque and lightly golden in spots. Remember, do not overcook as it will bake further in the oven.
-
While the chicken cooks, add the cream cheese, ½ cup shredded cheese, the sautéed fajita veggies, and fajita seasoning to a large mixing bowl. Stir these ingredients together until well incorporated and set aside.
-
Add the minced garlic, smoked paprika, and salt to the skillet with the chicken and stir to incorporate. Cook, stirring frequently, until the garlic is fragrant, approximately 30 to 60 seconds.
-
Transfer the chicken and garlic mixture to the bowl with the cream cheese mixture. Stir thoroughly to fully combine all ingredients, then transfer the entire mixture back into the same cast-iron skillet. Spread the mixture out into one even layer, ensuring it completely covers the bottom of the skillet.

-
Top the chicken mixture generously with the remaining 1 cup of shredded cheese, spreading it out into an even layer for a perfect golden crust.
-
Place the skillet in the preheated oven and bake for 15 to 20 minutes, or until the cheese is beautifully melted and bubbly, and the chicken is cooked through and tender.
-
Carefully remove the skillet from the oven and allow it to rest for 3 to 5 minutes. This brief resting period helps the flavors meld and the casserole set. Top as desired with your favorite garnishes, divide into portions, and serve warm over rice, in tortillas, or simply as-is. Enjoy your delicious creamy chicken fajita casserole!
Recipe Notes & Substitutions
- No Oven-Safe Skillet? No Problem! If you don’t have a cast-iron or other oven-safe skillet, you can still make this delicious recipe. Simply perform all the stovetop steps in a regular skillet, then transfer the entire mixture to a baking dish before adding the final layer of cheese and baking it in the oven.
- Bell Pepper Choices: We love using a mix of red and green bell peppers for a vibrant pop of color and balanced flavor in our casserole. However, feel free to use any color bell pepper you prefer, or even a combination of yellow and orange for a sweeter profile.
- Making it Lower Carb: To reduce the carbohydrate content, opt for green bell peppers, which typically have fewer carbs than red or yellow. It’s also crucial to use a fajita or taco seasoning blend that has no added sugars or sugar substitutes; our homemade keto taco seasoning is an excellent choice. You can also use just half an onion instead of a whole one to further lower carbs. For cheese, shred it yourself from a block rather than using pre-shredded varieties, which often contain anti-caking agents and fillers that can add hidden carbs.
- Spice it Up: For those who enjoy a spicier kick, consider adding a finely diced jalapeño or a pinch of red pepper flakes along with the bell peppers and onions. A dash of your favorite hot sauce mixed into the cream sauce can also elevate the heat level.
- Chicken Thighs Option: While boneless, skinless chicken breasts are used here, chicken thighs can also be a fantastic choice for added flavor and moisture. Adjust cooking times slightly as thighs may take a little longer to cook through.
