Ingredients

For the Sofritas Sauce

  • 1 medium poblano pepper
  • 4 chipotle peppers from can of chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce from can of chipotle peppers in adobo sauce
  • 3-4 cloves garlic
  • ½ cup fresh tomato salsa
  • 2 tablespoons coconut oil or avocado oil
  • ½ teaspoon salt
  • 1 pinch sugar

For the Rice

  • 1 ½ cups brown long grain rice uncooked
  • 4-5 tablespoons fresh lime juice juice from approximately 2 limes
  • 1 handful finely chopped fresh cilantro
  • 1 large pinch salt

For the Tofu Sofritas

  • 2 tablespoons neutral oil avocado oil, olive oil, refined coconut oil, etc.; divided
  • 8 ounces baby bella mushrooms sliced
  • 1 16-ounce block extra-firm tofu pressed
  • 1 14-ounce can pinto beans

For the Guacamole

  • 2-3 medium avocados pit removed, peeled
  • ½ cup minced red onion
  • 1 handful finely chopped fresh cilantro
  • 4-5 tablespoons fresh lime juice juice from approximately 2 limes

Serving Suggestions (All Optional)

Instructions

To Roast Poblano Pepper

  • Gas Range: Carefully hold poblano pepper over the flame of a gas range, rotating it until the skin turns dark and blistered on all sides.
  • Broiler: Preheat your broiler to high. Place the pepper directly on an oven rack, approximately 6 inches beneath the heating element. Place a baking pan on the rack below the pepper to catch any liquid. Broil the pepper until the skin is dark and blistered, then turn the pepper to broil the remaining sides.
  • Regardless of the method used, allow the pepper to cool slightly before proceeding with the sofritas sauce preparation.

For the Sofritas Sauce

  • Remove the stem from the roasted poblano pepper. Add the pepper to a food processor bowl or blender, along with the chipotle peppers, adobo sauce, garlic, salsa, oil, salt, and sugar. Pulse or blend until the ingredients form a smooth, paste-like mixture. Set this flavorful sauce aside.

For the Rice

  • Cook the brown rice according to its package directions. For an extra zesty flavor, add the juice of 2 limes to the cooking liquid.
  • Once the rice is prepared, fluff it gently with a fork. Stir in the finely chopped fresh cilantro and season with salt to taste. Transfer the rice to a bowl and cover it to keep warm while you prepare the sofritas.

For the Tofu Sofritas

  • Slice the pressed extra-firm tofu into 1-inch cubes.
  • Heat a large skillet over medium-high heat. Once the pan is warm, add the neutral oil. Continue heating the skillet until the oil is hot and shimmering.
  • When the oil is hot, add the sliced baby bella mushrooms to the skillet. Sauté the mushrooms, stirring occasionally, until they have softened and released their moisture.
  • Add the cubed tofu to the skillet. Cook, stirring occasionally, until the tofu becomes golden in color and begins to crisp on the edges.
  • Pour the prepared sofritas sauce and the undrained pinto beans into the skillet with the tofu and mushrooms. Stir well to incorporate all the ingredients. Reduce the heat to medium and let it simmer for 15 to 20 minutes, stirring occasionally. If the sauce becomes too thick, you can stir in small amounts of water as needed to reach your desired consistency.

For the Guacamole

  • While the sofritas simmers, add the avocado flesh to a medium bowl. Mash the avocado with a fork until your desired consistency is achieved (chunky or smooth). Stir in the minced red onion, fresh cilantro, and fresh lime juice until all ingredients are fully incorporated and mixed.

To Serve

  • Divide the cilantro-lime brown rice evenly between your serving bowls. Top the rice generously with the hot tofu sofritas and a large spoonful of the freshly made guacamole. Garnish with cotija cheese (if using) and extra minced red onion if desired. Serve immediately and enjoy your homemade Chipotle-style Tofu Sofritas Bowl!
