- 2 cups whole walnuts
- 2 ½ cups dates, pitted (Medjool dates are highly recommended for their soft texture and rich flavor)
- 1 cup raw cacao or cocoa powder** (raw cacao powder enhances flavor and nutrient profile)
- 1 cup raw unsalted almonds, roughly chopped
- ¼ tsp. fine sea salt
Instructions
- Begin by placing the whole walnuts into a food processor. Process on high speed until the walnuts are finely ground into a coarse, flour-like meal. Be careful not to over-process them into a butter consistency.
- Next, add the raw cacao (or cocoa) powder and the sea salt to the food processor with the ground walnuts. Pulse a few times until all the dry ingredients are thoroughly combined and evenly distributed.
- With the food processor running, add the pitted dates one at a time through the feed tube. Continue to process until the mixture starts to come together and forms a sticky mass. The final mixture should resemble coarse cake crumbs, but when you press a small amount between your fingers, it should easily stick together and hold its shape. If the mixture is too dry and doesn’t hold, add a few more dates, one by one, and process again until the desired consistency is achieved.
- Transfer the walnut-cacao mixture to a large mixing bowl. Add the roughly chopped raw almonds. Using your hands or a sturdy spoon, mix well to ensure the almonds are evenly incorporated throughout the brownie mixture. The almonds will provide a delightful crunch.
