  • 1 ½ cups raw cashews soaked in hot water for 1 hour
  • ½ cup refined coconut oil melted
  • cup coconut cream solid part only
  • ½ cup maple syrup or honey use maple syrup if vegan, plus more to taste
  • 3-4 Tbsp. fresh lemon juice
  • 1 Tbsp. + 1/2 tsp. apple cider vinegar
  • 2 tsp. vanilla extract
  • cup vegan chocolate chips
  • pinch salt

Ganache Topping

  • ½ cup vegan chocolate chips
  • ½ cup coconut cream solid part only
  • 2 tsp. refined coconut oil
  • ½ tsp. vanilla

  • Combine all crust ingredients in a blender or food processor. Pulse until crumbly. Press mixture evenly into the bottom of a 7-inch springform pan. Freeze for 15 minutes while you prepare the filling.
  • Make filling: Drain the soaked cashews thoroughly. Combine all filling ingredients, except for the chocolate chips, in a high-speed blender. Process until the mixture is very, very smooth and completely creamy. Taste and add more maple syrup (if vegan) or honey to your preference. Once smooth, gently stir in the chocolate chips. Pour this luscious filling over your chilled crust and return to the fridge to chill until firm, which will take approximately 3-4 hours.
  • Make ganache: In a medium microwave-safe bowl, combine all ganache ingredients. Microwave for 60 seconds, then stir very well until smooth. Continue microwaving in 30-second bursts, stirring vigorously between each, until the ganache is completely smooth and melted. Allow it to cool slightly until it’s no longer hot but still easily pourable. Spread this smooth ganache over the firm cookie dough cheesecake filling and place it back in the fridge.
