Growing up, s’mores were never really my thing. I know, it sounds almost sacrilegious to admit, but they simply weren’t a staple in my childhood traditions. The classic combination of graham cracker, chocolate, and toasted marshmallow didn’t ignite the same spark of excitement in me as it did for others. Given a choice between a s’more and almost any other dessert, I’d invariably pick the alternative. Fast forward to today, and that sentiment has dramatically shifted. My palate has evolved, and with it, a newfound appreciation for this iconic campfire treat has blossomed into an outright obsession, particularly for innovative, gourmet variations.

My journey into the world of gourmet s’mores began a few years ago, inspired by the endless stream of creative s’mores bars and dessert ideas flooding platforms like Pinterest. I started envisioning flavor combinations that would truly elevate the humble s’more into something extraordinary, something that would indeed make me choose it over “anything else.” One evening, I was captivated by the idea of blackberry and white chocolate s’mores. The realization of that vision was nothing short of magical—far surpassing anything I could have imagined. The sweet tartness of blackberries, combined with creamy white chocolate and perfectly toasted marshmallows, created an experience that was truly heavenly.

Following the success of those melty, creamy, and wonderfully tart blackberry-white chocolate concoctions, I ventured further into the realm of sophisticated s’mores with fresh cherry and dark chocolate s’mores. This creation was a delightful homage to one of the most timeless and beloved flavor pairings. The deep, rich notes of dark chocolate played beautifully against the bright, juicy sweetness of fresh cherries, all encapsulated within the warm embrace of a s’more. Each bite was a revelation, proving that this classic treat could indeed be transformed into a refined dessert.

As my passion for innovative s’mores grew, so did my ambition. This year, I knew I had to push the boundaries even further, to create something truly unparalleled. The answer felt clear: matcha. Its distinctive earthy flavor, vibrant green hue, and increasing presence in the culinary world made it the obvious next step in my gourmet s’mores adventure. Matcha has a unique ability to add depth and sophistication, promising a flavor profile unlike any s’more before it.

Matcha’s popularity has surged in recent years, evolving from a traditional Japanese tea into a versatile ingredient cherished in countless desserts and savory dishes worldwide. I’ve been a fervent admirer of matcha for years, with tins of the vibrant green powder always stocked in my pantry, ready for experimental bakes and refreshing lattes. From vegan chocolate-dipped matcha sugar cookies crafted in my first solo apartment to various matcha-infused delights, this ingredient has always held a special place in my culinary heart. I’m absolutely thrilled to share one of my ultimate favorite flavors with a growing community of green tea enthusiasts. There’s just something about matcha that captivates me—it’s one of those rare ingredients where, if I spot it on a menu, I simply *must* order it.

This enduring obsession with matcha was perhaps most memorably showcased during my honeymoon in Paris. On our final day, laden with luggage and en route to the metro, we stumbled upon Sadaharu Aoki, a renowned Japanese pâtisserie. Despite our tight schedule, I couldn’t resist. I promptly “pillaged” the shop, acquiring almost every matcha-infused delicacy they offered. My husband, bless his heart, could only watch in amused exasperation. While I may not have dramatically shrieked about maintaining American stereotypes abroad, my actions certainly conveyed a powerful, undeniable passion for all things matcha. The memory of devouring their exquisite pixelated pâtisseries, even with all our travel bags in tow, remains a cherished testament to my unwavering love for this unique flavor.

So, after a lifetime of avoiding s’mores and a decade of adoring matcha, the logical next step was clear: a spectacular fusion of the two. I knew that the marriage of matcha and s’mores would be nothing short of epic, perhaps even reaching legendary proportions in the dessert world. These Matcha Raspberry Dark Chocolate S’mores, in my humble opinion, eclipse any previous culinary love affairs. Imagine being truly “drunk in love” with a dessert: the intense bitterness of dark chocolate lazily melting across buttery graham crackers, perfectly complementing the pillowy, earthy matcha marshmallows, ever so lightly charred at their edges. Then, a vibrant, tart raspberry jam cuts through the richness, providing an exquisite balance of both texture and flavor. This isn’t just a s’more; it’s a multi-sensory experience that promises pure indulgence.
If you haven’t experienced this culinary revelation, get ready, because it’s about to happen. While being “drunk in love” might sometimes lead to neglecting your passions, indulging in these Matcha Raspberry Dark Chocolate S’mores might just inspire new levels of joy and connection. Just be warned: if you devour them too voraciously, you might find yourself contemplating a marriage proposal or, alternatively, realizing that some people simply won’t understand your profound appreciation for gourmet s’mores. And sometimes, it’s better to know these things sooner rather than later, wouldn’t you agree?
The key to perfecting these unique s’mores lies in balancing the flavors. It’s tempting to pile on the dark chocolate, but restraint is crucial. Too much chocolate can overpower the delicate earthiness of the matcha. A more balanced proportion allows each distinct flavor to mingle beautifully, creating a harmonious symphony on your palate. Choose high-quality ingredients, from the rich dark chocolate to the tart raspberry jam and, of course, the star of the show: homemade matcha marshmallows.

Ingredients
- 2 graham crackers
- 1 teaspoon butter, melted
- 1 large matcha marshmallow
- 1 square good dark chocolate, from a bar—ideally breaking off a little (about 2/3 ounce)
- 1 tbsp small spoonful good raspberry jam
Instructions
- Preheat your broiler. Now’s a good time to prepare your ingredients; speed is key for the freshest s’mores experience.
- Brush both sides of the graham crackers with melted butter. Place them in a single layer on a microwave-safe plate and lay a square of dark chocolate on one graham cracker (for each s’more). Microwave for about 30 seconds, or until the dark chocolate is just beginning to soften and melt. Be careful not to microwave for too long, as parts of your graham cracker can easily burn!
- Transfer the graham cracker with dark chocolate to a pan and place a matcha marshmallow on top of the chocolate. Place it under the broiler and watch carefully—this usually takes about 1 minute to 90 seconds. The marshmallow should puff up a little and begin to brown. Do not over-broil, as homemade marshmallows are much more sensitive to heat than store-bought varieties! If you prefer your marshmallow a bit more toasted, you can use a kitchen torch to brown any naked edges after removing it from the broiler.
- Spoon a small amount of cold raspberry jam onto the top of the toasted marshmallow and then cap it with the remaining graham cracker. Serve immediately to enjoy the perfect melty, gooey experience.
Notes
Serve immediately for the best taste and texture. The contrast of the warm marshmallow and chocolate with the cool jam is truly delightful.
