  • 1 tablespoon ghee or refined coconut oil
  • 1 cup diced Vidalia onion
  • 7 tablespoons coconut aminos ¼ cup + 3 tablespoons
  • 3-4 cloves garlic minced
  • 1 teaspoon cumin powder
  • 1 teaspoon mustard powder
  • 1 tablespoon chipotle chili powder
  • 1 tablespoon chili powder
  • 1 6-ounce can tomato paste
  • 1 ½ cups low-sodium chicken stock or vegetable stock
  • 4 tablespoons apple cider vinegar

Instructions

 

  • Place a medium saucepan on the stovetop over medium heat. Once the pan is warm, add 1 tablespoon ghee or refined coconut oil and continue heating until melted, swirling the pan occasionally to distribute the fat across the surface.
  • When the ghee has melted and is shimmering, add 1 cup diced Vidalia onion to the saucepan. Stir to incorporate and sauté the diced onion for approximately 5 minutes or until the onions are softened and translucent, releasing their natural sweetness.
  • Once the onions are ready, add the remaining ingredients: 7 tablespoons coconut aminos, 3-4 cloves minced garlic, 1 teaspoon cumin powder, 1 teaspoon mustard powder, 1 tablespoon chipotle chili powder, 1 tablespoon chili powder, 1 6-ounce can tomato paste, 1 ½ cups low-sodium chicken stock (or vegetable stock), and 4 tablespoons apple cider vinegar.
  • Increase the heat under the saucepan to medium-high and whisk all ingredients together vigorously until they are thoroughly combined and smooth. Continue whisking until the mixture comes to a gentle boil.
  • As the mixture begins to boil gently, reduce the heat under the saucepan to low. Allow the sauce to simmer for 15 to 20 minutes, stirring frequently to prevent sticking, until the sauce has thickened to your desired consistency. The flavors will meld beautifully during this process.
