Ingredients

  • Freshly ground black pepper, to taste
  • 3 teaspoons Italian seasoning (plus more as needed)
  • 1 teaspoon paprika or smoked paprika (plus more as needed)

For the Chicken Breasts

  • 4 medium boneless, skinless chicken breasts (approximately 2 pounds total, see Notes)

To Cook the Chicken Breasts

  • 2 tablespoons olive oil or avocado oil
  • 1 cup low-sodium chicken broth or water

Instructions

  1. In a small bowl, combine salt, freshly ground black pepper, 3 teaspoons Italian seasoning, and 1 teaspoon paprika. Stir until the ingredients are well-blended. Set this spice rub aside.
  2. Place the 4 medium boneless, skinless chicken breasts on a cutting board. Thoroughly pat all sides of the chicken breasts dry with paper towels. This step is crucial for achieving a good sear.
  3. Sprinkle approximately half of the prepared spice blend evenly over one side of the chicken breasts. Flip the chicken over and sprinkle the remaining spice blend on the other side, ensuring to season the edges as well. Adjust with additional salt, pepper, Italian seasoning, or paprika if you prefer a stronger flavor.
  4. Set your Instant Pot to Sauté mode (normal heat). Add 2 tablespoons of olive oil to the Instant Pot insert, spreading it to cover as much of the surface as possible. Heat the oil until it is hot and shimmering, indicating it’s ready for searing.
  5. Once the oil is hot, carefully place the seasoned chicken breasts directly into the bottom of the Instant Pot. Work in batches if necessary to avoid overcrowding the pot, as this can prevent proper searing.
  6. Sear the chicken breasts for 2 to 3 minutes on the first side, until a light golden-brown crust forms. Flip them over with tongs and sear for another 2 to 3 minutes on the second side. Once seared, remove the chicken breasts from the Instant Pot and set them aside on a plate. Repeat this process for any remaining chicken.
  7. After all chicken breasts have been seared and removed, turn off the Sauté function on your Instant Pot. Pour in 1 cup of low-sodium chicken broth (or water) while the pot is still hot. Immediately use a silicone spatula or wooden spoon to scrape up any browned bits of chicken that may be stuck to the bottom of the insert. This crucial deglazing step prevents a “burn” warning and adds flavor to your liquid.
  8. Place the Instant Pot trivet (a metal rack) into the bottom of the Instant Pot insert. Arrange the seared chicken breasts on top of the trivet. Overlap the chicken breasts slightly if needed to ensure they all fit comfortably within the pot.
  9. Secure the lid on your Instant Pot, making sure the sealing valve is set to the “Sealing” position. Select the Manual or Pressure Cook setting (High Pressure) and set the timer for 5 minutes. The Instant Pot will take some time to come to pressure before the 5-minute cooking cycle begins.
  10. Once the 5-minute cook time is complete, immediately and carefully perform a Quick Release of the pressure by turning the valve to the “Venting” position. Use caution, as the escaping steam will be very hot. Once the pressure has fully released and the float valve drops, carefully remove the lid.
  11. Carefully remove the cooked chicken breasts from the Instant Pot and transfer them to a clean plate or cutting board. Allow them to rest for 3 to 5 minutes before slicing or serving. Resting allows the juices to redistribute, ensuring tender and moist chicken. After resting, transfer the chicken to serving plates and enjoy warm with your favorite side dishes.
