Ingredients

For the Rosemary Cranberry Sauce with Orange

  • 3 (1-inch long) sprigs fresh rosemary
  • 12 ounces fresh whole cranberries, rinsed well
  • 1 cup granulated sugar
  • ½ cup pulp-free 100% orange juice (or juice of one orange with enough water added to make ½ cup)
  • ½ teaspoon fine orange zest

  • 1 sprig fresh rosemary, to garnish

Instructions

  1. Wrap the 3 (1-inch long) sprigs of fresh rosemary in cheesecloth and tie the bundle securely with kitchen twine. Ensure the ends of the twine are long enough to hang out of the saucepan for easy removal later.
  2. In a medium saucepan, combine the 12 ounces of fresh whole cranberries, 1 cup of granulated sugar, and ½ cup of pulp-free 100% orange juice. Stir these ingredients together until well incorporated. Then, add the wrapped rosemary bundle, making sure it is fully submerged in the mixture.
  3. Place the saucepan on your stovetop over medium-high heat. Stir the mixture constantly while bringing it to a gentle boil. This continuous stirring helps prevent sticking and ensures even heating.
  4. Once the mixture begins to boil, reduce the heat under the saucepan to low. Simmer the mixture for 1 minute for a sauce with more whole berries, or up to 5 minutes for a sauce with fewer whole berries. As the sauce simmers, the cranberries will naturally begin to burst. To accelerate this process, you can gently press some of the cranberries against the side of the saucepan with the back of your wooden spoon.
  5. When your desired number of cranberries have burst and the sauce has reached your preferred consistency, remove the saucepan from the heat. Stir in the ½ teaspoon of fine orange zest until it is fully incorporated. Cover the saucepan with its lid and set it aside to rest for 10 minutes. This resting period allows the flavors to meld beautifully.
  6. After 10 minutes, carefully remove the lid from the saucepan. Using the back of your wooden spoon, press the rosemary bundle against the side of the saucepan to extract any remaining aromatic flavors, then remove the bundle and discard it.
  7. Transfer the finished cranberry sauce to a serving bowl. Allow the sauce to cool completely to room temperature before serving. If desired, garnish with an additional sprig of fresh rosemary just before serving. Alternatively, once cooled, cover the bowl with a lid or plastic wrap and refrigerate. If chilling, remove the sauce from the refrigerator about 30 minutes prior to serving to allow it to come closer to room temperature for the best flavor and texture, then garnish and serve.
