Beyond the Ordinary: What Makes This Strawberry Ice Cream Special?

My admiration for Jeni’s ice cream is no secret. Their innovative approach to ice cream making consistently delivers results that are unparalleled in texture and flavor. This particular roasted strawberry buttermilk recipe from their cookbook captivated me immediately. I was searching for a unique dessert for Father’s Day, and knowing my dad’s fondness for strawberry ice cream, this recipe felt like a perfect fit. At the time, I was in one of my intense ice cream making phases, and the promise of a truly exceptional strawberry treat was irresistible.

Generally, strawberry ice cream hasn’t been a flavor that typically ignites a deep sense of excitement for me. It’s often too icy, too sweet, or lacks that concentrated strawberry punch. However, the unique techniques employed in Jeni’s recipes, especially the decision to roast the berries and incorporate buttermilk, transformed my expectations. Roasting the strawberries intensifies their natural sweetness and flavor while evaporating excess water, a common culprit for icy homemade ice cream. Adding buttermilk introduces a delightful tanginess that perfectly complements the rich strawberry notes. Blending it all into Jeni’s signature creamy base elevates this dessert to a league of its own.

The Magic of Roasting Strawberries

The secret to this ice cream’s incredible depth of flavor lies in the simple yet transformative step of roasting the strawberries. When strawberries are roasted, their natural sugars caramelize, and much of their water content evaporates. This process concentrates their flavor, turning ordinary berries into intensely sweet, slightly jammy gems. This concentration is crucial for ice cream, as it prevents the formation of large ice crystals that can make homemade ice cream grainy or icy. Instead, you get a deeply flavored strawberry puree that melts smoothly on your tongue, ensuring every spoonful is packed with rich, authentic berry taste.

Crafting the Perfect Jeni’s Ice Cream Base

Every Jeni’s recipe begins with a meticulously crafted base designed for maximum smoothness and richness. This specific recipe uses a cornstarch slurry and a touch of cream cheese, which are key to achieving that signature Jeni’s texture. The cornstarch acts as a stabilizer, preventing ice crystal formation and contributing to the silky consistency. Cream cheese adds an incredible depth of flavor and velvety mouthfeel without making the ice cream feel heavy or overly sweet. The roasted strawberry syrup, blended seamlessly with the buttermilk, integrates flawlessly into this luscious base. The result is an ice cream that isn’t overly tart but is instead perfectly balanced, smooth, and decadently rich. It’s the ideal canvas for showcasing the vibrant flavor of ripe strawberries without overwhelming the palate.

Why Now is the Perfect Time to Make It

You might be thinking, “Strawberry season is over, why share this recipe now?” While it’s true that the peak of summer berry season might be winding down, it’s not quite fall yet! There’s still time to celebrate the season’s last bounty of fresh strawberries, or even to use high-quality frozen strawberries, before we fully transition to autumn flavors. This ice cream is a perfect way to savor the sweet essence of summer a little longer. You’ll thank me for it – even if you curse me in a few weeks when fresh berries become a pricey luxury. There truly is no time like the present to indulge in this exquisite frozen treat!

My Personal Twist for Enhanced Flavor

Having made this recipe several times, I discovered a small but significant adjustment that I believe takes it from excellent to absolutely sublime. I recommend doubling the amount of strawberry purée incorporated into the ice cream base. This really emphasizes the rich berry flavor in a way that feels essential, ensuring that the strawberry notes truly sing through the creamy texture and tangy buttermilk. It’s a simple tweak that makes a remarkable difference, creating an even more intensely fruity and satisfying ice cream experience.

Reminiscing about my week of strawberry cravings has reignited a desperate need for a pint of this roasted strawberry buttermilk ice cream, but my freezer is currently far too packed to accommodate an ice cream maker bowl. What’s a girl to do but share the recipe and encourage everyone else to enjoy it?

Roasted Strawberry Buttermilk Ice Cream

The best strawberry ice cream I’ve ever tasted–balanced perfectly with tart buttermilk and so smooth, thanks to the roasting and puréeing.

Prep Time: 4 hours 30 minutes
Cook Time: 11 minutes
Total Time: 4 hours 41 minutes

Ingredients

  • 1 pint fresh strawberries, hulled and sliced
  • 1 cup / 2 cup sugar (Original has “1 cup /2 cup sugar”. Assuming 1/2 cup sugar for strawberries.)
  • 3 tablespoons lemon juice
  • 1 1/2 cups whole milk
  • 2 tablespoons cornstarch
  • 2 ounces cream cheese, softened
  • 1/8 teaspoon fine sea salt
  • 1 1/4 cups heavy cream
  • 2/3 cup sugar
  • 2 tablespoons light corn syrup
  • 1/4 cup buttermilk

Instructions

  1. Preheat oven to 375 degrees F. Combine strawberries with sugar in an 8″ square glass or ceramic baking dish, stirring gently to mix well. Roast for 8 minutes, or until just soft. Let cool slightly. Puree in a food processor with lemon juice. Measure 1 cup of the pureed berries; refrigerate the rest of the puree for another use.
  2. Mix about 2 tablespoons of the milk with the cornstarch in a small bowl to make a smooth slurry. Whisk the cream cheese and salt in a medium bowl until smooth. Fill a large bowl with ice and water.
  3. Combine the remaining milk, cream, sugar and corn syrup in a 4-quart saucepan, bring to a rolling boil over medium-high heat, and boil for 4 minutes. Remove from the heat and gradually whisk in the cornstarch slurry. Bring the mixture back to a boil over medium-high heat and cook, stirring with a heat-proof spatula, until slightly thickened, about 1 minute. Remove from heat.
  4. Gradually whisk the hot milk mixture into the cream cheese until smooth. Add the buttermilk and reserved strawberry puree and blend well. Pour the mixture into a 1-gallon Ziploc freezer bag and submerge the sealed bag in the ice bath. Let stand, adding more ice as necessary, until cold, about 30 minutes.
  5. Pour the ice cream mixture into the frozen canister of an electric ice cream freezer and run according to the directions of your ice cream maker. Pack the finished ice cream into a storage container, press a sheet of parchment directly against the surface, and seal with an airtight lid.

Notes: Freeze in the coldest part of your freezer until firm, at least 4 hours. Makes about 1 quart.
