  • Large plate or wire cooling rack
  • Paper towels
  • Large bowl

  • 9×13 baking dish greased
  • Aluminum Foil

Ingredients

  • 12 ounces bacon strips sliced into ½-inch long pieces
  • 12 large eggs
  • ½ teaspoon salt
  • freshly ground black pepper to taste
  • ½ cup half-and-half or milk of choice
  • 16 ounces shredded hash browns frozen or thawed, approximately 4-5 cups
  • 1 14.5-ounce can Mexican diced tomatoes drained well and patted dry, divided
  • 6 flour or corn tortillas 6-8 inch
  • 3 cups freshly shredded Mexican cheese blend divided, plus more to serve

Instructions

 

  1. Preheat oven to 350° Fahrenheit. Heat a large skillet over medium heat. Once skillet is hot, add bacon and cook until crisp, flipping as needed.
  2. Transfer cooked bacon to a plate lined with paper towels or a wire cooling rack over paper towels to drain excess fat. Drain the skillet and wipe out any remaining residue.
  3. In a large bowl, whisk together 12 eggs, half-and-half, salt, and pepper until thoroughly combined and slightly frothy.
  4. Return the skillet to the stove over medium heat. Lightly grease the skillet or melt 1 tablespoon of butter. Once skillet is hot, pour in the egg mixture and cook, stirring frequently, until the eggs are thickened but roughly half the mixture is still liquid (soft scrambled). Crumble the cooled bacon into the skillet with the eggs and gently fold the bacon in.
  5. Place 2 tortillas in the bottom of a greased 9×13 baking dish, slightly overlapping if necessary to cover the base. Cover these tortillas with an even layer of hash browns, then divide the egg mixture in half and top the hash browns with one half of the egg mixture.
  6. Cover this egg layer with half of the well-drained and patted dry diced tomatoes, then sprinkle 1 cup of cheese over it. Repeat these layers with another 2 tortillas, the remaining egg mixture, the rest of the diced tomatoes, and another 1 cup of cheese. Top the casserole with the final 2 tortillas and the last 1 cup of cheese.
  7. Cover the baking dish tightly with aluminum foil. Place the dish in the preheated oven and cook for 25 to 30 minutes, or until the casserole is heated through, the eggs are fully cooked, and the cheese is melted and bubbly. Remove from the oven and let it stand for 5 minutes before slicing. Slice the casserole into 12 squares and serve warm with your desired toppings.
