For the Whole30 Garlic Mayonnaise

  • Crack room temperature eggs directly into a large mixing bowl (or food processor, or blender). Add ½ cup olive oil, 1 teaspoon mustard powder, and 1 teaspoon salt.
  • Insert an immersion blender into the large bowl (or cover food processor/blender with lid) and pulse ingredients 3 to 4 times until thoroughly combined.
  • Slowly drizzle the remaining olive oil into the mayonnaise mixture while continuously blending with the immersion blender. Pour the oil in very gradually until the mixture visibly thickens. Once it has thickened substantially, you can increase the speed of pouring the oil. Blend constantly to ensure a smooth emulsion.
  • After all the oil has been incorporated, add the fresh lemon juice and smashed garlic. Continue blending until the mayonnaise is perfectly smooth. Taste and add more salt if needed to achieve your desired flavor.
  • Reserve 1 cup of this freshly made garlic mayonnaise for the ranch dressing recipe below. Transfer any remaining mayo to an airtight jar with a lid and refrigerate until ready for other uses.

For the Whole30 Ranch Dressing

  • In a small bowl, combine 1 tablespoon of lemon juice and ½ cup of unsweetened almond milk. Allow this mixture to sit undisturbed for 2 to 3 minutes, or until the almond milk appears “curdled,” creating a Whole30-compliant “buttermilk” substitute.
  • Add the garlic mayonnaise, chopped fresh parsley, and 1-2 drops of white vinegar to a large mixing bowl. Whisk these ingredients together thoroughly to combine. Then, slowly pour in the “buttermilk” mixture while whisking constantly. Continue adding the “buttermilk” until the dressing reaches your desired consistency. Note: The dressing will naturally thicken further upon standing, so you may wish to make it slightly thinner than your ideal consistency at this stage.

  • Garlic Mayonnaise Alternatives: If you prefer not to make the homemade garlic mayonnaise, you can use 1 cup of any compliant Whole30 mayonnaise. For garlic flavor, blend it with 1 garlic clove until smooth. If you wish to skip the garlic entirely, simply use plain compliant mayonnaise.
  • Troubleshooting Mayonnaise (If it “Breaks”): If your mayonnaise fails to thicken and emulsify (a common issue known as “breaking”) when using a food processor or blender, don’t worry! Transfer the broken mayo mixture to a separate bowl and set it aside. Add a fresh, third room temperature egg to your blender or food processor. Then, slowly add approximately ¼ cup of the broken mayo mixture to the fresh egg and blend until it becomes smooth and incorporated.
