For the Wings
- 3 pounds chicken wings (drumettes, wingettes, or “party wings”; see Notes)
For the “Breading”
- 1 teaspoon arrowroot powder (see Notes)
- 1 teaspoon baking soda (see Notes)
- 2 teaspoons cream of tartar (see Notes)
- 1 teaspoon fine sea salt (more or less to taste)
- 2 teaspoons garlic powder
For the Buffalo Sauce
- 2 tablespoons ghee
- ¼ cup Frank’s Original Red Hot Sauce
To Serve (Optional)
- Celery sticks
- Carrot sticks
- Whole30 ranch (store-bought or homemade)
- Additional Whole30 buffalo sauce
Instructions
- Preheat oven to 450° Fahrenheit. Line a rimmed baking sheet with parchment paper. Place a wire rack on top of the parchment paper and set the pan aside.
- Use paper towels to pat the chicken wings completely dry. This step is crucial for ultimate crispiness. Place the dried wings in a large mixing bowl and set aside.
- If using the full “breading”: Add arrowroot powder, baking soda, cream of tartar, sea salt, and garlic powder to a small mixing bowl. Whisk or stir until all ingredients are well combined. (Skip to Step 5 if you prefer not to use the full “breading”.)

- If using the full “breading”: Sprinkle half of the “breading” mixture evenly over the chicken wings in the large bowl. Toss to thoroughly coat the wings in the mixture. Repeat until all the “breading” mixture has been added and the wings are fully coated. (Skip to Step 5 if not using the full “breading”.)

- If not using the full “breading”: Whisk together sea salt and garlic powder in a small mixing bowl. Sprinkle this mixture over the chicken wings in the large bowl, then toss or stir to fully coat the wings in the seasonings.
- Arrange the wings on top of the wire baking rack in a single, even layer, being careful not to overlap them. This is key for maximum crispiness. If necessary, split the wings between two prepared baking sheets to ensure they have enough space.

- Place the baking sheet in the preheated oven. Bake the wings for 25 minutes, then carefully remove the baking sheet from the oven.
- Using tongs, carefully flip over each wing to ensure even cooking and browning. Return the baking sheet to the oven and bake for another 25 minutes, or until the wings are fully cooked through and wonderfully crispy. Once ready, carefully remove the baking sheet from the oven and let the wings rest for 2 to 3 minutes.
- While the wings rest, prepare the buffalo sauce. Place the ghee in a microwave-safe bowl. Microwave the ghee in 15-second bursts, stirring between each burst, until it is fully melted but not boiling or bubbling.
- Pour the melted ghee into a medium mixing bowl. Add the Frank’s Original Red Hot Sauce and stir well until the ingredients are fully combined into a smooth buffalo sauce.
- Transfer the hot, cooked chicken wings to a second large bowl. Drizzle the homemade ghee-hot sauce mixture over the wings, then toss the wings until they are fully coated in the delicious buffalo sauce.
